I made this cake for two reasons: 1) I was in search of a good carrot cake recipe and 2) I had a can of crushed pineapple that had to be used.
This cake was fabulous!!! I omitted the nuts (personally I just don't like them in baking) and used a 9x13 pan so I had to adjust the bake time - other than that, I followed the recipe to a T. It is by far the best carrot cake I have ever had. So moist and so much flavour but not overly sweet.
We had dinner guests and one complimented saying it would probably win over those that don't like carrot cake because it's so much more than just a carrot cake.
Will definitely make again and will be my go to for potlucks etc.
