Bacon-Balsamic Deviled Eggs

Okay, wow! These were absolutely awesome! The only thing I didn't have was red onion, so I substituted with sweet yellow onion. My husband, who grew up with a mom making deviled eggs almost weekly, had outgrown the taste for deviled eggs, but was absolutely going on and on about these. He said they were the best he'd ever had. I just made them on the spur of the moment when a few eggs cracked while boiling them for my son to take to daycare. It was very simple to make and since we liked it so much, I'll definitely be making these again.

Pizza On The Grill I

I attempted this using my bread machine and it worked out fabulously well. In order, I put in the warm water, 1T olive oil, flour, active dry yeast, sugar, and kosher salt and ran it under the dough setting. Once it was done, I kneaded it for about 4 minutes and added the basil and garlic as the recipe called for, then put it in a bowl with about 1 T of olive oil and let it double. I was then able to create 3 small pizzas (good personal size). I just had to stay outside while it cooked to make sure it wouldn't get too dark on the grill. Worked out fabulously. Grilled on one side first, then flipped over and put a little of the garlic/olive oil over it, then added the tomato sauce and toppings. To get the cheese melted, I covered it for only a couple of minutes until I felt it was okay and moved the crust around so it wasn't in any direct flames. I may have to always use this method from now on, the crust flavor is wonderful!!

Chewy Peanut Butter Chocolate Chip Cookies

These are awesome, and I love the fact that they stay chewy. I made the recipe as is, but will need to adjust this next time and see if they're just as good if I add more peanut butter. Some of our guests didn't seem to realize they were peanut butter cookies.

Sweet Corn Tomalito

Over the years, I've tried to locate a recipe for the tomalito they serve at Chevy's, and at last I've found it. I always asked for a side of tomalito if my dish didn't come with it, so I m just thrilled. Putting it in the microwave definitely worked and obviously reduces the cooking time considerably. An excellent recipe and one that I'll make regularly from now on.

Pupusas de Queso (Cheese-Stuffed Tortillas)

Both parents are from El Salvador and my mom traditional shapes it by hand and inserts the cheese into it and flattens it back up. She doesn't layer it with cheese in between. The cheese will occasionally brown as it comes out of the tortilla, but it's a wonderful salty flavor, especially fabulous with the curtido, which is onion, coleslaw, carrots and vinegar (think there's a bit of sugar she throws in too--not much). It sits for a few days and softens up and is wonderful with the pupusa. Traditionally, I believe adding refried beans is common, as well as something similar to bacon bits. I don't have the technique down with my hands making it perfectly round, something my mom can do, but if you can master it, it's a great treat!

Spinach Tomato Tortellini

I made this recipe exactly as it was written and it was fabulous. I didn't expect it to have such good flavor, but the combination of ingredients really makes it quite tasty and flavorful. The only thing I will do differently when I make it next time (which will be soon) is double or even triple up on the spinach, and try a little more garlic since we all love the flavor. This will definitely become a regular. My 4 yr old and 7 yr old (who are normally picky) made faces when they saw it, but they sure had no problem eating it and one even asked for seconds!

The Best Meatloaf I've Ever Made

Exceptionally tasty! My husband and two young children really enjoyed this meatloaf. I did not add the "optional" 1/4 cup of milk since everything already seemed too moist. I may have had a bit less than 2 lbs of ground beef. It was the best meatloaf we've all had, and it was requested that it remain on our "regular" list of dinner meals from now on. Thanks so much for this wonderful recipe.

Pecan Pie V

I wasn't a fan of this pie. My family also thought it was just okay; husband and 2 kids under 8. Actually, my husband, who likes overly sweet pies too much felt this wasn't sweet enough. I thought the sweetness of it was the best part, the filling just wasn't to my satisfaction. I followed the recipe exactly and it was just okay. It didn't seem to have enough filling. As it was cooking the topping almost looked like meringue, which was odd. Will stick to my tried and true recipe.
