Sweet Dinner Rolls

Used this recipe without a bread machine- did the traditional kneading, etc. and came out with a GREAT sweet bread. I used it for sticky bun, and was impressed- it is even better than my mom's usual recipe for sweet bread-I am converted!

Sugar Cookie Icing

Followed other suggestions and added extra milk and corn syrup- overall, I wasn't impressed- it did not hold up well to sprinkles...Sorry- won't be using again...

Layered Chicken and Black Bean Enchilada Casserole

Big hit in my house- used 1/2 package taco mix + 1/2 cup water and heated with pre-cooked shredded chicken. Also, I couldn't find corn tortillas (as others recommended), so I used corn tortilla chips layered- this was fine- they got soft, but added nice flavor- it was definitely a casserole consistency, with great flavor. Will be doing again!

Chicken Noodle Casserole I

Used leftover chicken from a roaster I did the night before- probably good with leftover turkey as well...I used more like 10 oz whole wheat noodles, and it was plenty moist. I also added a tablespoon of dried minced onion, and about 1.5 teaspoons of cajun seasoning. We are not cracker fans, so I sprinkled with seasoned bread crumbs and a bit of parmesan cheese (next time I will leave out the cheese- it just wasn't quite right- maybe cheddar?)- all-in-all, a solid recipe liked by my whole family, will do again.

Baby Back Ribs

BIG hit...used a dry rub of cajun seasonings mixed with brown sugar and let them sit in the fridge for 6 hrs, then added 1/2 cup veggie stock in the tinfoil for moisture, and baked at 250 for 2.5 hrs. Pulled them out, covered in BBQ sauce and broiled for 3-4 minutes to carmelize the sugars...

Awesome Slow Cooker Pot Roast

Used a smaller roast (3.5lbs) and did one can of low sodium mush soup, otherwise all else the same, and slow cooked for 8 hours. I pulled out the roast, sliced, and returned back to the pot to keep warm AND coat the meat- served over egg noodles! My 5 yr old asked for seconds!!!

Molten Chocolate Cakes With Sugar-Coated Raspberries

Followed recipe as stated, and it was excellent! I used medium sized ramekins, and watched them like a hawk to make sure they were not overcooked. Served without raspberries, but with a dollop of vanilla ice cream- a hit with my 5 yr old!!!

Pork and Black Bean Stew

Very good- I did in the crock-pot instead and doubled the recipe for leftovers and added extra beans...next time I will lessen the liquid (too much for the crock-pot, as was more like a soup) and use reduced-sodium broth as the chorizo is VERY salty. Next time I will add some sauted green pepper and diced tomatoes to the mix- this is a keeper!

Double Tomato Bruschetta

My first try at bruschetta- I followed the recipe as is, except I may have added a bit more oil and basalmic (i didn't really measure!). I took this to my best friend's house- she is a bruschetta FREAK- and she proclaimed it was the best she has ever had!!! I did put thick slices of fresh mozzarella on the slightly toasted bread before loading it up- JUST A SUPER RECIPE!!! We soaked up the leftover sauce on the plate with more bread!!!

Kettle Corn

Followed the 3 second on/off the heat as recommended and used a LARGE pot with a lid. Used the exact measurement for ingredients. At the end, after taking pot off the heat, I stirred with a wooden spoon to get all the good stuff off the bottom of the pan and coat the popcorn- pinch of salt, and it was RAPIDLY consumed in my house- SUPER!!!
