St. Louis Toasted Ravioli

I tried this recipe and Giada's recipe on foodnetwork (basic difference being the dip - egg/milk vs buttermilk) and we preferred this just a tad more. I used panko bread crumbs with italian salad seasoning spice mix I had made (1 c bread crumbs to 1 Tbs spice). Also dipped and let the liquid drip off over a cooling rack before breading. Fried in an electric fryer around 330' for ~3 minutes, turning if it seemed to need it. I did the breading prep about 2 hours before I needed to fry them and they came out fine. I'd emphasize getting high quality ravioli for the best result!

Japanese Tofu Salad

Loved it, with the decrease in the amount of sauce as others mentioned (used the same amount of the aromatics though). I used shallots, since I didn't have red onion. Used fresh tofu from a local tofu shop, which is amazing. Thanks!

Harvest Pork Stew

Great soup. I dredged the pork in some flour before browning. For us, one apple (fuji) was enough sweetness, though I did include a japanese yam instead of potatoes, carrots, and fresh butternut squash. All those could have contributed to sweetness. I did add kale near the end which I love for the addition of color, nutrition & texture. I left it in the slow cooker on high accidentally for 4-5 hours and it still came out fine. (phew!) I might up the amount of stock next time to have a little more soup to stuff ratio. Ate with quinoa on the side.

Apple Hermits

Very tasty and moist. Used 1 granny smith apple. Didn't make the icing, and cut the sugar to 1c, though could probably even do with less. Thinking about adding some chocolate chips next time!
