About this Cook
I am an almost 50yo female who loves to eat and has a love-hate relationship with cooking. I determine over and over again that i will find just a few simple recipes to prepare for evening meals then find myself striving to find yet another recipe that appeals taste-wise to picky husband and almost 10yo daughter, is healthy and relatively easy to prepare. I need a recipe to cook for the most part but always find myself adapting it, usually because i don't have a certain ingredient and refuse to buy and then waste most of it. I love that people try the allrecipes recipes but constantly change them to fit their needs and discover many wonderful ways to cook wonderful food. I want to grow in my confidence and competence and maybe over time not be so recipe dependent. In the meantime i'm so grateful for Allrecipes.
My favorite things to cook
I love to bake and, as a person who is really reforming her eating habits to lose weight and be healthier, as well as help my family be healthier, am constantly looking for ways to make those tasty baked goods healthier without using all the artificial substitutes. I also love cooking soups and stews and doing them in a healthier, and still tasty fashion. I'm determined to cook healthy, yummny soups and stews full of flavor and healthy veggies. I also like slow-cooking so i continue to be in search of healthy, tasty crock pot recipes as well.
My cooking triumphs
Finding a chicken tomato parmesan recipe that everyone loves and is healthy is one triumph. Another is a curried lamb and lentil stew that everyone enjoyed. When everyone(husband, daughter and myself) gives the dish i've prepared a thumbs up and it's pretty simple to prepare i feel triumphant. I prepared a curried cod stew that i found here just tonite and my daughter at it pretty well despite the spiciness. Finding and successfully preparing tasty recipes w/fish and seafood(a healthy staple for diets) is something else that makes me feel triumphant.
My cooking tragedies
Fortunately i haven't had many, but i don't go for fancy foods so it shouldn't be to hard to be successful. There was one recipe i prepared months ago that even i couldn't stand. More funny really than tragic.

Chicken and Biscuit Casserole
Oh my gosh!!!! Not exactly a chicken pot pie and not exactly chicken and dumplings. Better than both!! I used what was left of a roast chicken from Costco that we'd had the nite before. Followed the recipe to a "T" except used frozen instead of canned peas and added some zucchini that I had in the fridge. My daughter and I both loved this!! What I especially love was achieving the creamy texture w/out the benefit of "cream of" anything soups. The biscuit/dumpling creation was a bit messy but I recruited my 13yo daughter for most of that part and they turned out great!! Yes it was a bit labor intensive, but the results were well worth it.

Cod Curry
Great flavor and texture!! I peeled and cut 2 zucchinis into chunks and added them shortly after adding the onion. I also discovered i had no lemons or lemon juice but did have limes so i substituted lime juice. I didn't use near as much jalapeno-had a drying one and cut it up and added only some. It had quite a bite, but my 9yo ate it with lots of rice and enjoyed it. made my own garlic and ginger paste using an allrecipes recipe. I will make this again and hopefully get quicker at prep.
