Hi everyone, my name is Nikki! I'm just now beginning to get serious about cooking since I moved in with my boyfriend and am in charge of a kitchen of my own. Unfortunately I'm a little behind since my mom's idea of cooking is Hamburger Helper. Basically I need all the help I can get!
My favorite things to cook
I loooove to bake sweets like cakes, cupcakes, cookies, and pies! I also like to make anything with potatoes or cheese in it. lol
My favorite family cooking traditions
Italian Beef..I don't think it's authentic but it's something that's been passed down for generations that I really love.
My cooking triumphs
I made indian food the other night that actually tasted like it came from a restaurant! I was so stoked about it!
My cooking tragedies
Too many to list...Though I think the worst running in my family was when my Gram Gram blew up the microwave by cooking a potato too long.

Butter Icing for Cookies
We just used this yesterday to decorate some sugar cookies to give out as gifts. It is very sweet so use it sparingly as other users have said. Not the kind of icing to coat an entire cookie, but tastes great piped around edges and such.

Vegetarian Tortilla Soup
I had to make some changes to this as I didn't have all the ingredients but it came out sooo good. I used a whole fresh red pepper, one large onion and cooked them in the garlic. Added the cumin and some black pepper. Then I added 1 can crushed tomatoes, 1 can mexican seasoned tomatoes, 2 cans water with some bullion. I also added 4 dashes of Tapatilo, a can of black beans, and a can of kidney beans. Very easy to add on and make subsitutions.

Amish White Bread
This was great! I used another reviewers suggestion to use only 2 tablespoons sugar and it turned out perfectly. Very very simple and easy to make. I wish I would have tried this recipe for my first bread making experience.
