Roasted Potatoes with Tomatoes, Basil, and Garlic

I made this recipe two ways: first, I followed it exactly as stated and it was OK, basil and tomatoes too overcooked and lacking some flavor. Second time around, I chopped up the garlic and some white onion and added them to the listed ingredients. I took all of the ingredients and put them into a pot of water and boiled(1:5 ratio for water-ingredients)for ten minutes and simmered for fifteen. It was excellent!

Sweet Polish Sausage

Yummy! I used pre-cooked Polish sausage (very cheap) and it was still excellent and even easier. Served it with garlic mashed potatoes and green beans. For a Polish girl that is used to the more traditional Polish sausage, this is a delightful change!

Original Homemade Italian Beef

You are not going to know what hit you! This was by far the best sandwich we have EVER eaten! I used three lbs of chuck steak instead of the roast and it turned out so juicy and tender. I cut the fat off the steak before putting in the crock pot. Then I threw the fat in with the meat to give it some juiciness. I added the peppers halfway through. I baked the hamburger buns with mozarella cheese. This was remarkable and incredibly low maintenance too--thank you!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Truly unique flavor! I really don't understand reviews that said it was bland--impossible! I took the advice of others and substituted equal servings of milk and white wine for the water. You must be patient when stirring the cream cheese in: good things come to those who wait! I added chopped bell peppers for some crunch.

Barbecued Round Steak

This was scrumptious! I am on a very tight schedule, so I threw all of the ingredients into my crock pot (doubled the garlic) and put on low for about 8 hours. There wasn't very much talking during dinner because this was the main focus! I have never had a barbeque sauce quite like this before!

Shrimp Scampi Bake

We couldn't stop eating them! I tweaked it a little: added a dash of dry white wine and olive oil and decreased the butter by 1/8 cup. I used cooked shrimp--cooked for 10 minutes at 350. I have 4 lbs of shrimp in my freezer with this recipe written all over them!

Beef Enchiladas II

Chicken Piccata II

Very good! The sauce needed to be quadrupled for our tastes... I think it would have been too bland otherwise. However, the problem could stem from that I didn't use a tenderizer on the chicken. I will definitely be making again to find out!

Famous Pork Chops

Very, very tasty! We don't normally like pork chops so this came as a pleasant surprise. My only gripe was that the breading was too soggy. I will have to agree that removing the lid would have been a good idea.
