Honey-Lime Vinaigrette
I love this recipe. I was looking for a fresh dressing to go with my avocado mango salad, and found this to be perfect, especially since I had a bunch of limes on the table. I am always a fan of fresh ingredients, so I used 2 cloves of fresh garlic instead of the garlic powder. I also substituted out the white sugar, so I ended up using about 2 1/2 T honey. I will definitely use this recipe again... especially since my friends have taken most of the leftovers. :)

Avocado Soup with Chicken and Lime
I'm giving this 3 stars for now, because it was wayyyy to spicy with the 4 jalapenos the recipe initially called for (and I can handle my spice). I even added another cup of chicken broth, and that didn't touch it. The soup was so spicy that I didn't even finish half a bowl, even with a dollop of sour cream on top to hopefully cool it a little. Nope. I like the ingredients in this soup though, so I hope to make it again, with 2 jalapenos at most.

Hummus III
This recipe was amazing. My only problem was that the garbanzo beans, tahini, lemon juice, salt, and garlic didn't initially blend as smoothly as I would've liked. I don't know if this was due to my food processor (it's a good Cuisinart though), or the lack of oil. I added a little oil to the blend and it seemed to help. I also ended up splitting the hummus, and putting in a roasted red pepper-- that variety was so delicious. Adding the oil on top is a must to prevent it from drying and cracking. After making this, my friends and I both felt like we will never buy hummus again.
