Simple White Cake

Reviewed: Jun. 8, 2011
I made it exactly like the recipe and it had good taste but dry. Not just a bit dry but pass me a glass of milk NOW kind of dry. My 8 yr old said it tasted like cornbread, which he loves so he liked it. I have found other white cakes that I like either. I will give this cake one more chance and make it with more milk like others suggested and will update this review.

Spinach and Feta Pita Bake

Reviewed: Mar. 24, 2009
Delicious and so easy to make! I added pitted kalamata olives and capers. My kids loved them too! (without the olives and capers for them). It has been a great snack for them (6 and 9 y/o)when they come home from school.

Hash Brown Casserole II

Reviewed: Jan. 27, 2009
I have been making this dish for at least 15 years and it's always a hit! one thing I do different is i never thaw the potatoes. it becomes too soft. I use the frozen Ore ida potatoes with onions and peppers. Also, i have used the mushroom can soup and didn't like it as much as using the chicken soup.

Chex® Muddy Buddies®

Reviewed: Jan. 27, 2009
Hershey's is coming out with new products soon including muddy buddies. I got paid to test their new chocolate products that are the old homestyle candies American families made (including smores) and had to give my opinion in look, taste, packing, etc. I had never had muddy buddies before but when we got to that one it was sooo good I had to come home and find the recipe. I doubled the recipe and it was eaten in less than a week. I put one bag of muddy buddies in the freezer and I would eat them right out of the freezer. It didn't lose its crunch. I now know that Hershey's has done a geat job because it tasted the same. The problem with making it is that you really can't stop eating them. Trust me, I gained a few pounds because of these muddy buddies. I can't wait til Hershey's starts selling this candy so I can just buy one.

Black Bean and Corn Salad II

Reviewed: Nov. 19, 2008
This salad is delicious. The second time I made it I cut the olive oil in half, added extra cilantro and it was even better! Getting good quality avocados makes a good difference (Costco has good ones). Perfect for the summer!

Boilermaker Tailgate Chili

Reviewed: Nov. 19, 2008
I made this for my sons birthday party and it has a huge hit! Once I gathered all the ingredients I realized I didn't have a pot big enough. I went to the local Hispanic store (latin people cook for huge crowds!)and bought a huge pot for $40! lol Everybody loved the chili!! I can't wait to make it again now that it's getting cold here.

Sweet Corn Cake

Reviewed: Nov. 19, 2008
It is sooooo good! I've been making this recipe for the last 2 years and everyone loves it! It will not feed more than four people and it's difficult to make large amounts because of the way is cooked in the oven with water. I made this for my dad with splenda instead of the sugar and it tasted really good too. Thanks for a great recipe!

Loved it! It makes more than 6 servings so get a large pitcher. Make sure you buy an extra can of limeade because you will be asked to make a second batch for sure!

Jamie's Cranberry Spinach Salad

Reviewed: Jan. 29, 2008
It was amazing!!! I bought oven roasted almonds and added crumbled blue cheese as suggested. It was delicious! I didn't cut back the sugar and it was perfect. I started adding half the sugar of what the recipe asked for and tasted it and kept on adding more sugar until I realized I should just follow the recipe exactly as it says. Simply delicious and very easy!!!

Empanadas

Reviewed: Jan. 22, 2008
Delicious!!! I made these last night for my son's second grade class as they are studying Mexico. The dough was very easy to work with and didn't have to use a pinch of flour to roll it out. Even my 7 and 4 yr old boys were rolling out the dough with no problem! I tripled the recipe and got about 40 empanadas. I used "Comstock more fruit" apple filling that I bought at Safeway. I used water for the edges and got no leakage at all. No mess in the oven, just follow the recipe exactly as it says. I took me about 1.5 hours to form the empanadas because I had little helpers I had to watch. Just have a glass of wine while you are making them...no stress at all!

Chocolate Cavity Maker Cake

Reviewed: Jan. 16, 2008
I have been making this delicious cake for many years and it is a shame that I'm just now writing a review. My son who was turning 5 wanted a mint chocolate cake in the shape of Spongebob. I experimented and added Andes mint chips instead of chocolate chips but the cake turned out to minty. Even for my son and I who love mint it was too much mint. I would suggest to divide the amount of chips. Half to be Andes mints and half chocolate chips. Both my kids and my nephew did not like the strong mint taste...too bad because I spent a long time decorating spongebob. I give this recipe a 5 stars all the way because it has been our family's favorite and friends and neighbors are always requesting I make it. Everyone loves it!!!
