Cajun Chicken Pasta

Cranberry Pork Chops II

NOM! I did add the onions as someone suggested. Also, we don't really love sweet stuff so I added a little sugar at a time. It was so tart and yummy with the pork. Super tender. Oh and instead of water I added pineapple orange juice.

Happy Birthday Cake

I made this cake in a 9x13. I made it exactly the way it read except a added just a small amount (didn't measure) of milk at the end because the batter was REALLY thick. The only thing that I noticed was that after 30 minutes at 350 the knife came out covered in raw batter. The cake was quite dark at the point so I turned the oven down to 300 and cooked another 10 minutes. Came out of the pan pretty well. I haven't had a piece yet but the crumbs were tasty and my 2 year old son pinched a chunk out of itand wanted more more more! This cake does seem very dense but I don't know why that would be a bad thing.

Fresh Pineapple Upside Down Cake

This cake is amazing! The only change I had to make was that I used pineapple orange juice because that is what I had. This is so good! The whole family loved it and I could sit and eat the entire thing!

Penne with Chicken and Asparagus

Tasty!!! I made this tonight for the family. Everyone loved it. Yes it doesn't have much sauce but it does have tons of flavor. I added mushrooms because I had some that needed to be used and four cloves of garlic instead of garlic powder. Easy and wonderful and light!

Coconut Curry Fish

Holy fish curry batman, this was so YUMMY! The only thing I did differently was to use coconut oil to saute the veggies and I added cilantro because the hubs loooves it! Served over brown rice. My fish didn't fall apart but I left it in pretty big chunks. I also didn't find that I needed to thicken it with cornstarch, it was pretty thick already.

Fabulous Homemade Bread

Maybe I should do 5 stars due to new bread maker error. I dunno. I have never made bread with out the aid of a bread machine. But we do NOT like bread machine bread for a lot of reasons. This bread is amazing in taste. I rolled one out and put cinnamon and raisins, brown sugar and pecans in it. I haven't tasted it yet but can't wait. The one I made for sandwiches was short. It took two to = a regular size sandwich but this may be my fault. My hubby liked it but said it fell apart too much. Again maybe my fault. I lost count of cups of flour so I had to go by feel and I have never made bread before so I have nothing to base my "feel" on. I don't have a mixer so I had to knead and mix by hand. Overall I love it and can't wait to eat the other four loaves in the freezer. I will let it rise more next time. I guess in my head it would puff up in the oven but no such luck. :) YUMMY

Butternut Squash Bake

This is amazing! I added chicken to use it as a main course. I didn't have Italian bread crumbs so I just added a little oregano and basil to the mix. Family LOVED it.

Pecan Crusted Pork Chops

I just made a couple of changes. Instead of the egg and flour mixture (some comments said it was to thick) I mixed some dijon mustard with some honey and coated the pork chops in that before dipping them in the pecan mixture. I fried lightly in olive oil and then since I don't have an oven proof skillet, I moved them to a glass casserole that I sprayed with pam. So delicious! Whole family loved it.

Creole Tuna

This took about five minutes to make. I paired it with a bag of steam in the microwave rices with veggies in it. Delicious. I made it for my daughter and I so I cut the Creole in half so it wouldn't be to spicy for her. Also she and I ate all of this by ourselves so either we are healthy eaters or 4 servings is a little off.

B's Cordon Bleu Bundles

Ok, I hate people that do this but the base/idea of this recipe is good and I had to use different ingredients to use what I have. I used garlic butter crescent rolls, bacon and mozzerella cheese. I cooked the chicken in italian dressing and crisped the bacon first. So tasty!

Baked Slow Cooker Chicken

Four because I added minced garlic (jarred) and Creole seasoning. I also rubbed it down with olive oil. Cooked on foil quite a bit longer than the 10 hours because it was family game night. Added a little chicken stock to the bottom of the pan under the foil. Poured the drippings into a sauce pan and boiled and added a little cornstarch and made decent gravy. Everyone loved it. Fell off the bone, couldn't get it out of the pot in one piece. THANKS
