The first time I made them - AWESOME! Second time, not so good. Be careful not to over cook, even by a half a minute! They turn very dry.

Chocolate Covered Caramel Surprise Cookies

These are phenomenal!!!! These will be the new "go-to" cookies in our house. They are rich, so it is easy not to over-indulge. It is easy to over do it on the sugar coating; a little goes a long way on the final product.

Vegetarian Bean Curry

What an awesome recipe! Thank you for sharing. The only change I made was adding about half a can of chicken stock to help cook the lentils. Might consider adding coconut milk next time, for a south Indian flare. BTW, the grapes are not optional. If you don't have them around, make a special trip. They are totally worth it. Try golden raisins instead of the plain black. A dollop of sour cream on top can cut the heat of the curry and makes it really tasty!

Spicy Beef Curry Stew for the Slow Cooker

Very easy. I took the recommendations of a reviewer and threw everything together in the slower cooker before heading off to work. Came home that night to a perfect beef stew. Will maybe think of adding spinach to the cooker about a half-hour before serving, to get some greens in. Served over basmati rice. So good.

Enchilada Casserole III

This is really good and pretty easy to make. It made a lot of food, which is fine for me and my husband, as we can take the leftovers to work for lunch. Next time I will definitely use the canned sauce, as well as more cheese. And I used tortilla chips for the top layer of tortillas, which I will definitely do again.

Black Bean and Salsa Soup

So easy! I will definitely keep all these items in my pantry for an easy, last-minute meal. I think I will cut the veggie stock a bit, to thicken the soup. Or let it boil off a bit more. Great with cheese, sour cream and a few tortilla chips on top. Thanks so much for the recipe!

Kimberly's Meaty Meatloaf

This was the first meatloaf I ever tried. I used ground turkey instead of meat and so, as my husband says, can't really call it meatloaf. It was good, but not diner quality by any means. Would try it again with meat, but the turkey was pretty good.
