Pad Thai

What I did differently: I tripled the sauce, but only doubled the amount of sugar. I boiled the noodles for 1 minute and then let them sit in water (i would drain after boiling and then sit in cold water b/c they broke apart really easily). I only used 6 oz of noodles and it made a lot! I added some of the grn onions while cooking. I didn't have peanuts so I added 2 big spoons of crunchy peanut butter. I would add the sauce before you add the noodles. I used lime instead of lemon at the end.

Quinoa and Black Beans

So good! I only add one can of black beans. I like to serve it with sour cream, salsa, cheese, and green onions on top.

Balsamic-Glazed Salmon Fillets

This was a really good glaze! I sauteed some cherry tomatos, shaved zucchini, and onion in the same pan that I made the glaze in and put it on top of the salmon (after it was cooked). I had a thick piece of salmon and it definitely needed longer cooking time.

Pasta Salad with Homemade Dressing

The dressing is wonderful. I omit and add other veggies to this recipe but I follow dressing recipe exactly. I usually double the dressing for the salad.

Spicy Garlic Lime Chicken

This was so good!!! Based on other comments, I doubled the butter, which gave more of a sauce. I also pounded the chicken down to about a 1/2 inch thick. This chicken has such great flavor. It's not exactly spicy like the name says, but it is great.

Spinach Tomato Tortellini

This recipe is sooo good! It is a constant in my house. I cook it when company comes over or when I am staying with family. The only things I do a little different are add about a teaspoon of red pepper flakes, more garlic, and 1 cup of cheese. Love this recipe! Thanks!
