Avocado Shrimp Ceviche-Estillo Sarita

My SIL made this as an appetizer for Xmas. If you like guacamole, you will LOVE this. Im not a cold shrimp eating person but the flavors come together so well in this recipe that you cant help hoard the bowl to yourself! I would have never thought to add the sauces to something like this as well. I have now made this part of my recipes so I can make it for myself. Well done!

Russian Cabbage Borscht

I know there are a million ways that people think this recipe is the real way of making it..but here's what I think of this recipe...it rocked! I happened to have red cabbage on hand that I needed to use and figured it was worth a try. I had red cabbage a second time in my life by trying this recipe and had beets for the first time. The only thing I didnt have was caraway and substituted the tomato puree for tomatoes and chilis canned. I was leery of adding the vinegar and honey and was afraid my tomatoes I added would make it more "mexican" tasting but it was to die for! It gave it plenty of taste and a lil' kick and my husband and I devoured it all! He asked me to make it again! Thank you for sharing this. Im always into trying new "old school" recipes and this was perfect- and healthy too!

Zucchini Cakes

I only gave it four stars for the simple reason is the salitiness w/ the seasoning added and I only added about a tsp. I would suggest a half as you can always spinkle salt on the cakes after they are cooked, when you can actually taste them.

Sauteed Mushrooms

I had leftover mushrooms that I needed to use up and this was the perfect recipe for it. Added it atop a nice steak and it was delicious and I really dont like mushrooms. Definately a keeper!

Cabbage on the Grill

What a great way to use up left over cabbage, except now, Im going to buy cabbage just to make this! I added garlic powder w salt n pepper and a lil olive oil. It was exceptional!

Spoiled Baby Back Ribs

What a wonderful and easy recipe for my first time cooking ribs! The ribs were boiled first (too cold outside to cook) and then cooked in the oven. The sauce was a bit vinagry so i just added more brown sugar and a lil honey and it was perfect. I would make this again!

Beer Bread I

The recipe was very simple, easy to make, all the more to add or subtract things you like and dont like. My first try I used Corona (my beer pref) and it was just okay. I do think that it needed more sugar and I did add a little cheese to the top for added flavor. I plan to make this again just with different beer.

Roasted Tomatoes with Garlic

I was skeptikal about making this considering I dont like cherry tomatoes or anything but roma tomatoes. Even my italian husband was skeptikal about it being a side dish (I never had tomatos as a side dish, only in a salad)...BUT, it was FANTASTIC. I got to use up a bunch of cherry tomatoes I plantes in the garden without feeling guilty. If you like dried tomatoes this is perfect...I also thought about layering them on a panini. I just pulled a bunch and plan on making them again.

Ropa Vieja

First time making this! I had meat that I had to use and popped this into a pot on the stovetop and it came out awesome! It was very juicy and tasty...needed absolutely no salt or sour cream or lime (like I like to add to my tacos). Thank you so much. My husbands family was impressed!

Sauteed Sweet Plantains (Tajaditas Dulces de Platano)

Threw black plantains in oil, with less than tsp brown sugar already in oil. Cooked till browned and placed on papertowel to absorb oil. They were very sweet and carmelized- but next time I wont leave them there long bc then they were stuck and I might use butter too instead of oil. I also sprinkled them with salt (after tasting them) and the sweet-salt was delicious!

Peach Bread

Yummy! Moist! Absolutely loved it! I did the exact recipe despite some user alterations-I did use fresh peaches that were puried. I wasnt sure if it was going to be sweet enough so I melted a couple tb of butter and brown sugar and spooned three tb on each loaf. My husband and I loved it!

Italian Sausage Tortellini Soup

I LOVE IT!!! Wow, this turned out so good- I think the only thing I changed was i used canned tomatoes in juice rather then fresh only bc they get expensive around this time....I added more tortellini too. And I only was one cup short of beef stock so i threw in a boujion cube and w one cup water and omitted the 1/3 cup that was needed. my husbands perference would be that the veggies cook down more and add more sausage- although i added 1.5 links which i thought was good. I also added celery bc i wanted to use it up. It was perfect! Im so going to pass this one on to ppl. Thanks alot Tim!!!

Sweet Potato Casserole II

Althought difficult to determine what one sweet potato equals since I seemed to buy the super sized ones during thanksgiving, I estimated them to be average sized in the recipe and was right. This casserole was a hit both years i made it! And if its not sweet enough during the cooking process, you just simply add more marshmallows. I made triple the recipe last night and it came out awesome. I now save this one as one of my permanent recipes! Thanks a bunch.

Baked Corn

It rocked!!! I searched through many recipes and I believe the sour cream is what changed this recipe's moistness and taste compared to others which just add creamed corn to boxed corn bread. Everyone raved about this...we loved it so much we ate it for breakfast. Just enough sweetness for being bread.

Butternut Squash-Sweet Potato Ginger Bisque

This one was not one of the better soups on here. I used a small portion of ginger and even that was too much. I would consider adding powdered ginger in the end bc it was overpowering and I would also add something on the sweeter side. I thought this would have been a sweet soup but guess its supposed to be more on the spicier end with some of the ingredients.

Never Enough Green Bean Casserole

I personally dont like green beans or the casseerole but tried this version (after searching through many) to make for others during thanksgiving and everyone seemed to like it, including myself. I believe what makes it better is the cr. mushroom soup. I also used cheddar fried onions on top instead of regular which gave it a lil more cheesy taste and also used the old english cheese instead of velveeta and bacon- it was delicious! It didnt need any other seasonings other than what was already in it.

Tangy Chicken Fajitas

I love the take of vinegar and lime and the combination together is awesome! The smell is over powering when cooking but the taste is great. Instead of using the seasoning they recommended, I just used Goya Chicken and it came out wonderful. I made this twice and it was a hit both times!
