Cajun Dirty Rice

Fantastic! I love cooking southern/cajun food from scratch, but let's face it, many of us don't have time to spend creating lavish meals. This is a wonderfully easy weekday supper that we really enjoyed. I'll definitely keep this one handy. It's like a cross between red beans & rice & jambalaya. My only changes were to use chicken broth instead of water and a liberal sprinkling of cajun seasoning in place of the salt and pepper. I also used turkey sausage (smoked) instead of ground, I wasn't clear on which type the recipe called for. Absolutely serve with a side of cornbread. Yum!

Cincinnati Chili I

This was...different. I've been eyeing this recipe for months and finally got up the courage to try it. I boiled the meat per other reviewers but then followed the rest exactly. It was good! Just very different (but I've never ventured very far from N. Florida). My taste buds are just very confused...lol.

Fried Cinnamon Strips

Mmmm...these were so easy and tasty! Such a nice light treat (if you don't count the fact that they are fried and coated in sugar...lol). Will definitely make again, they were a hit with kids AND adults.

Tomato Chicken Parmesan

Wow! This was delicious! I followed another poster's advice and only dirtied one dish (brown in skillet and then finish cooking until no longer pink; deglaze pan with pasta sauce and then simmer) but I was a little disappointed that the outside got soggy. Next time I will follow the recipe 100%. Nonetheless this was well received by all and I'm already looking forward to making it again. Yum!

Garlic Angel Hair Pasta

This was so simple and quite tasty! My boys arrived home later than usual so I left my noodles in the pot. When they got home most of the water had soaked up so I just mixed the butter and parm in (leaving the slivered garlic in). My boys ate it up. This was a great side that will compliment any dish, rather than compete with it. Thank you!

Country Fried Steak and Milk Gravy

I was REALLY nervous about these being too tough but I followed the recipe exactly and they were perfect. The coating stayed nice and crunchy and the meat was fork tender. I did oversalt it but that's no one's fault but my own. Delicious!

Tacos in Pasta Shells

I subbed a bit because I stubbornly refuse to measure ingredients. I used the full 8 oz of cream cheese, ground turkey and threw a can of rotele in with the meat. This gave me enough stuffing for the full box of shells. The entire family really enjoyed this dish and I'll definitely add it to the rotation. Thanks!

Chicken Breasts in Caper Cream Sauce

I am glad I finally tried this (I'd been eyeing it a while). I'd never tried capers before. This was an overall very good piece of chicken, but I think maybe next time I'll skip the capers part. Not that the recipe is bad, by any means! I just don't think capers suit our tastes. I really enjoyed all the other flavors, though. Thank you!

Pleasant Pork Chops

The taste of those was soo good. I don't know why, though, but I can't produce tender chops! Maybe it's the cut I buy but they were still tough after an hour. However the gravy was sooo good. I'll keep trying with different cuts of pork. Thanks!

Broiled Tilapia Parmesan

This was delicious! My only change was to bake instead of broil, and then once I spread the topping on, I broiled for 2-3 minutes. We all enjoyed this very much. I already can't wait to make it again! :)

Chicken Milano

This was really tasty! I doubled the sauce and had plenty. I also only used one pan, I browned the chicken and then set it aside; scraped up all the brown bits and started the sauce. Sadly I didn't have fresh basil and know it would have been even better with it. I'll definitely keep this in the rotation. Fast and delicious. Thank you for posting!

Seasoned Potato Fries

These were so good; even the teenager that hates potatoes ate them! I was lazy and instead of using the seasoning I poured on about a half packet of Italian dressing powder. Quite tasty and will be made again. I'm happy to have a new side dish we can all agree on!

Dee's Roast Pork for Tacos

This was tasty! I put a bit of olive oil in the paste so it would spread easier. I didn't think the chili powder was over powering personally. I cooked mine for approx 6 hours and it still wasn't easy to shred with forks. Overall I was pleased though. Thanks!
