Sweet Grilled Corn

Wow these were soo yummy! I skipped soaking the corn (we like ours crispy) and forgot to cut slits in the foil, they did fine and didn't burn. A good alternative to regular butter/salt/pepper.

Red Potato Salad

Very tasty! I added a couple hard boiled eggs and used green onions (scallions) instead of chives, just because that's what I had handy. Will definitely make again.

Slow Cooker Chicken Creole

Very tasty! And so easy. I used a heavy amount of creole seasoning and also dumped about a half bag of okra in the crock. I used a bag of frozen chicken breasts and cooked for about 8 hours on low. Served over rice with cornbread. Big hit at the table and really healthy!

Swiss Chicken Casserole II

This was pretty good. I was worried the stuffing wouldn't cook so I poured some chicken broth over the top. Well that made it mushy so I'm better off just following the recipe next time instead of improvising. Very simple, although mine did take a little over an hour to cook. :-)

Delicious Ham and Potato Soup

The title is correct, this is delicious. I didn't measure the potatoes (also did not peel them) or ham and used broth instead of water. About a box and a half. It smelled so good while it was cooking and tasted even better. Very hearty and VERY inexpensive. Will definitely keep in the rotation. Yum Yum!

Creamy Chicken Rice Soup

This was pretty good! I agree with others that this really isn't "soup" per se, more of a chicken and rice dish. I cheated and used last night's leftover turkey and cooked the rice right along with everything else. Very filling and the lemon flavoring just gave it a nice fresh taste. Very well received by the kids!

Lime Chicken Soft Tacos

Yum! I didn't follow the instructions 100%, instead I marinated in the lime, sugar, vinegar mixture with some fresh cilantro. Then I followed the recipe when it was time to cook (discarding the marinade and making fresh sauce). I subbed more cilantro for the oregano. Served in warm tortillas with guac, monterey jack, sour cream and fresh salsa. Mexi rice and black beans on the side. Two of my boys at three tacos! So fresh and delicious. Will definintely make again soon. Such a nice break from heavy ground beef tacos. :-)

Baked Hash Browns

Oh my...I have to be honest up front and say I had little expectations for this, but it was excellent! I wasn't sure what to expect but what I got was a creamy, rich side dish that really complimented some mild grilled fish. So easy and I'll definitely keep this one handy. Thank you!

Baked Pork Chops I

YES!!! Finally!! I have been cooking forever but have NEVER been able to cook a good pork chop until now. These were outstanding, and besides doubling the "gravy" I didn't change a thing. Yummmmmm.

Garlic-Lemon Double Stuffed Chicken

Yummmmmm. This was heavenly. I didn't change a thing (I don't think...I'm bad at measuring). It was very rich but paired with some simple basil orzo and corn it was a very satisfying meal. Mmmm.

Beef Stroganoff III

this was delicious. I borrowed other reviewers suggestions. I marinated a couple packs of lean beef stew (already cut in large pieces) in red wine for a couple hours. [Here's a tip for cutting larger cuts of meat, put it in the freezer for about an hour prior to cutting. It's much eaiser!] I then used some garlic in the sauce and fresh mushrooms. A small palmful of rosemary was added as well. I served over rice with some peas and had a very happy family!

Blue Cheese Waldorf Salad

This was SO good. I winged the measurements of everything and left the cayenne out due to personal tastes. It was very light and refreshing but packed big flavors! Will definitely make again, and soon.

BBQ Chicken Calzones

My boys loved, loved this! A little too sweet for me so next time I won't use honey BBQ sauce. I also stuffed in some gargonzola cheese. Yummmmm. So easy to put together, very filling and quite economic! We'll definitely use this one again!

Spinach Cheese Manicotti

This was fantastic. I borrowed a couple other posters' ideas and added a generous scoop of pesto and garlic to the cheese mixture and spooned a little alfredo on the top as I was serving. Even my meat eating boys didn't miss the meat in this dish. Delicious.

Slow Cooked Corned Beef for Sandwiches

This was fantastic! I had never made corned beef before so I was nervous about how it may turn out but was very pleasantly surprised! I toasted some slices of marble rye with swiss, piled on the meat (sliced easily after sitting on the cutting board for about 15 minutes) and added some 1000-Island dressing. Even the picky younger boys enjoyed. Made me wish I was Irish! ;)

Cheeseburger Soup I

This was very hearty and filling and quite tasty! Since I'm not one to measure I added a "pack" of ground beef, a "couple" chopped carrots, celery, etc. I also had leftover chicken and beef broth so I put both in (probably closer to 4 cups). Oh, I also forgot the sour cream and used a half-block of Velveeta instead of cheddar. Will definitely keep in the rotation, I only wish it wasn't 85 degrees out today when we ate it. :-)

Blackened Chicken

After I got done catching the neighborhood on fire (smile) this was really good! I let the chicken set for 5 minutes before slicing and popped one piece in my mouth and was terrified it was going to be way too spicy but it really wasn't! I'm not sure what I did wrong with my cast iron skillet, besides the fact that it was new. It created so much smoke in the house we had to open all the windows and doors and we all started choking (I quit smoking 2+ years ago and now I remember why...lol) But you know what, even after all that it was worth it. Served with some egg noodles boiled in garlic & buttered and some fresh green beans. Yum!

Hamburger Steak with Onions and Gravy

This was tasty! The gravy was very forgiving as I was distracted and let it simmer way too long, didn't burn a bit! I liked the hint of sweetness that the sherry added. Overall a nice filling comfort food. I did double the gravy, but since I made mac-n-cheese instead of mashed potatoes (booooo) it wasn't necessary. Next time that gravy is going over some taters! Thanks for the great supper!

Cajun Dirty Rice

Fantastic! I love cooking southern/cajun food from scratch, but let's face it, many of us don't have time to spend creating lavish meals. This is a wonderfully easy weekday supper that we really enjoyed. I'll definitely keep this one handy. It's like a cross between red beans & rice & jambalaya. My only changes were to use chicken broth instead of water and a liberal sprinkling of cajun seasoning in place of the salt and pepper. I also used turkey sausage (smoked) instead of ground, I wasn't clear on which type the recipe called for. Absolutely serve with a side of cornbread. Yum!
