Orzo with Tomatoes, Basil, and Gorgonzola

This was good. I doubled the orzo part but forgot to double the rest, so it was a little bland. My fault, not the recipe's. :-)

Easy Creamy Peppercorn Chicken

This was fine. Not as flavorful as I had hoped, I seasoned the heck out of the "sauce" and the chicken and it was still pretty mild. Great for the kids and definitely easy to make!

Oven Kalua Pork

Absolutely delicious. So much easier than smoking and tasted equally as yummy. I cooked mine longer only because of my schedule - probably closer to 7 hours, but it didn't hurt the taste or tenderness a bit. Served on Hawaiian rolls with a little bbq sauce. Already can't wait to make again.

Hamburger Potato Casserole

I didn't measure my potatoes and had closer to 1.5# of beef so I added an extra can of cream of mushroom. Also added in a layer of green beans. VERY easy and the kids loved it. Will def keep in my file. Thanks! =)

Coq au Vin alla Italiana

Very tasty! My only change was 2 cans of diced tomatoes instead of one can of whole. I used b/s thighs so there was no grease that others have mentioned. Served over mashed potatoes with lots of bread for sopping up the juices. Oh- and by using turkey sausage it was a pretty healthy meal!

Pollo (Chicken) Fricassee from Puerto Rico

This was very tasty, but to me, too greasy. I would like to try it again but with boneless/skinless breasts. I think I'm just not used to cooking with dark meat with skin. The flavor was fantastic, though!

Pasta Primavera with Italian Turkey Sausage

Very tasty! I wasn't sure if the sausage was supposed to be the sliced or ground kind, I bought links and removed the casing. Added a bit of chicken stock and used the twisty noodles since that was what I had. We enjoyed this!

Creamy Cheese Bread

Yum! Instead of broiling individual slices I spread on both halfs of the full loaf and baked it for 10 minutes or so and then sliced. I like the dip idea - I'll have to try it. Very creamy!

Creamy Slow Cooker Marsala Pork

Delish! I used 2 small tenderloins instead of chops and didn't bother browning first. Doubled the marsala since I had more meat than the recipe called for. We all enjoyed very much.

Chicken Asparagus Roll-Ups

Very tasty! I doubled the sauce since I was cooking for 5 but found it was not necessary. The tarragon/lemon/asparagus tasted very bright and fresh. A keeper!

Ham and Noodle Casserole

We didn't really care for this, sorry. I think it may have been that the swiss was too overpowering. I tried mixing in an extra can of cream of ___ and also about a cup of milk but it was still really thick and rich. Maybe I'll try again but with no cheese, or cheddar just sprinkled on top. Thanks for posting the recipe, though. It's always fun to try something new!

Mama's Asian Chicken and Rice

This was SO SO good. We really enjoyed it. I doubled the sauce, shook the chicken in a baggie of flour before sauteeing in the oil, and instead of measuring the orange juice I just juiced a full orange after zesting it. Served over the rice in a bowl with broccoli. Will definitely keep this in the rotation. Delish!
