Glo's Sausage Fried Rice

Reviewed: Sep. 12, 2008
Yummy, this was excellent! My only subs were about a lb of snap peas for the sprouts/peas and a little more soy to taste. I also cooked everything in 1 pot. Sausage - brown, scoop to plate. Egg - scramble, scoop to same plate. Then sautee veggies, dump in rice, dump in sausage/egg...done! Thanks!

Chili Dog Casserole I

Reviewed: Sep. 11, 2008
I just came across this and realized I never rated it over a month ago when I made it. I had a large party where we had lots of leftover buns & hot dogs and this was perfect! The kids really enjoyed this meal. I did toast the buns for a bit in the oven before pouring on 2 cans of the hormel brand chili but otherwise followed the recipe. It's not something I'd make frequently but we did enjoy it!

Classy Chicken

Reviewed: Sep. 9, 2008
This was a wonderful tasting supper! I doubled the wine/broth/sour cream and the extra sauce was so tasty. It was great to dip our bread in. Very easy with such a unique flavor. It's not easy to get my boys to eat baked/poached chicken but they were pleased. Thanks!

Baked Spaghetti

Reviewed: Sep. 8, 2008
Mmm, this was ooey and gooey and full of flavor. Very filling, which is a bonus when you are trying to feed three growing boys. We loved this. The only minor change was to double the sauce. We'll definitely keep this in the rotation. Thanks!

Lime Garlic Chicken

Reviewed: Sep. 6, 2008
Hmm, not our favorite. I tried half the butter like others suggested but my garlic burned and the chicken was just not very tasty. Sorry. :(

School Day Biscuits

Reviewed: Sep. 6, 2008
My kids gobbled these up! The only change I would make is to spray a generous amount of cooking spray to the cookie sheet, the sugar tends to get gooey and my biscuits stuck to the pan. Delicious and easy!! :)

Easy Paella

Reviewed: Aug. 30, 2008
I am not sure what paella is supposed to taste like, but this was fantastic! Following other reviewer's advice I browned the chorizo (removed from dutch oven), then browned the chicken (removed from dutch oven), then browned the garlic/peppers/onion. Poured in the stock (never realized this was so much richer than broth!), rice, spices and mixed the meats back in. The lemon zest was key. Simmered for about 1/2 hour covered and threw in the shrimp about 10 minutes before serving. Subbed 2 packs of sazon instead of saffron. Yum! Very hearty and full of flavor. I love one pot dishes!! Thanks!

One-Dish Chicken and Stuffing Bake

Reviewed: Aug. 27, 2008
This tasted okay. Not enough flavor for our tastes, but I do appreciate the simplicity of the meal. It certainly wasn't bad, but I probably won't make it again. That shouldn't deter someone else from trying it, it just didn't suit our tastes. Thanks though!

Anniversary Chicken I

Reviewed: Aug. 26, 2008
I don't know who in the world thought that mixing teriyaki and ranch was a good idea, but WOW! Quite yummy! I forgot to buy green onions but otherwise followed the recipe. Being lazy I used the ready-cooked bacon on top (last 10 minutes w/cheese) and I think that made it a dot saltier than I'd like. All in all the kids loved it so it's an A+ in my book! Will definitely add to the rotation. I'm so glad I tried it. :-)

White Cheese Chicken Lasagna

Reviewed: Aug. 26, 2008
The first time I made this I didn't think the chicken added any flavor to the dish, or thought maybe I had done something wrong. I tried it again last night (all veggie) including more garlic, some white wine, shallots, etc and it just didn't have enough flavor for the amount of time it took to put together. By all means this shouldn't stop anyone else from trying it, it just wasn't a dish that suits our taste buds. Still, thanks for posting it! :)

Baby Back Ribs

Reviewed: Aug. 25, 2008
Oh my these were so yummy! Like others, I created a dry rub (salt, paprika, sugar, garlic powder). I stripped the membranes [barf] and rubbed the spices in. Let them sit out a room temp in their foil for a couple hours before popping them in the oven. 2 hours later they were ready. I then stuck them under the low broiler for a few minutes with more sauce to make them extra gooey. We were all sticky and had sauce on our faces, hands, clothes and we couldn't have cared less. That was a fun supper. Thanks!

Tuna Ball

Reviewed: Aug. 23, 2008
This sounded delightfully odd! I wasn't sure about cream cheese & tuna together but it is quite tasty! I accidentally bought sliced almonds instead of pecans but it still gave it a nice crunch. I'm definitely tucking this one away for my next party. Thanks!

After-Thanksgiving Turkey Soup

Reviewed: Aug. 22, 2008
This is so yummy and so comforting! I didn't have a turkey carcass so I just boiled a chicken and otherwise followed the directions. We've been pelted w/a tropical storm for 4 days now so we needed some comfort food. Added a bit of cornstarch to thicken up to stick to our bellies. Thank you!

Slow Cooker Chicken Stroganoff

Reviewed: Aug. 21, 2008
This was VERY easy and very tasty! The only change I made was to double the recipe and threw in a few splashes of white wine (in the beginning). My kids really liked it and my house smelled yummy all day! :-)

Chicken Cordon Bleu II

Reviewed: Aug. 17, 2008
First let me say this is absolutely delicious! The only change I made was to use bread crumbs in place of the flour. I also have these cooking rubber band thingies that I'd picked up last Thanksgiving that I used in place of the toothpicks. That kept the breasts together, but not so tight it was restricting in any way. Now, this sounds like a pretty intimidating meal that I kept wanting to try but was nervous I'd mess it up but it was actually VERY simple to follow and it came out great. I'm so proud, it was like a gourmet supper! Thanks for a wonderful recipe that I'm sure I'll use over and over.

Touchdown Chili

Reviewed: Aug. 16, 2008
I know some people are hesitant to try recipes that have only been rated by a couple folks, but this one you must try! The combinations of the pepper/hot and the brown sugar, along with the bitterness from the vinegar and beer...there are so many hearty flavors that truly make this delicious. I didn't change a thing! Thank you!

Three Cheese Garlic Scalloped Potatoes

Reviewed: Aug. 13, 2008
Mmmmm...yummy! Based on other reviews I boiled the (whole) potatoes for about 1/2 hour earlier in the day. Then before supper I sliced them thin with the mandoline. I skipped the butter and subbed the garlic slices for a few shakes of adobo seasoning (I use that on EVERYTHING). I love garlic but was just feeling a bit lazy! Since I had the mandoline out I also sliced up some vidalia onions and layered them with the potatoes. Otherwise I followed the directions and baked for an hour uncovered. Served it with baked tilapia so it didn't feel quite as fattening. LOL. Thanks! :)

Shredded Beef Enchiladas

Reviewed: Aug. 12, 2008
The meat is fantastic! I used that part of th e recipe and then made chimis after it was shredded (rolled in flour tortillas, brushed with butter and baked). I threw my roast with all the ingredients in the crock pot and it was ready when I came home. I'll definitely use this over and over.

Three Cheese Manicotti

Reviewed: Aug. 12, 2008
This was pretty tasty! I did doctor up my sauce with some ground beef and diced tomatoes as we like it chunky. I also used the ziploc bag method of stuffing the shells. Messy? Oh yes. But worth it! Also my prep time was more like an hour but I'm pretty slow, LOL. :-)
