Jambalaya Casserole

I had never baked jambalaya before today. I'm a fan of the traditional style (cook all day, debone a chicken, etc) jambalaya but this was really good! Mine came out a bit on the salty side but I think that's my fault - I'm not good with measuring, I typically just eyeball stuff. I also sprinkled in a bit of cayenne and some cajun seasoning. My kids loved this & it's so much better for a quick meal than the stuff you buy in a box. A keeper!

Angel Chicken Pasta

Based on other's reviews I modified this recipe slightly to suit my individual tastes. I cut the chicken into smaller chunks and sauteed it on the stove in olive oil with some garlic (probably 3 grated cloves). I set it in the casserole dish when it was nearly cooked through and then started the sauce using the butter and browned bits in the same skillet. I doubled the wine to 1 cup and the cream cheese (mine had chives and onions) to 8 ounces (all the other ingredients remained the same). When it was heated through I poured over the chicken and baked for about 15-20 minutes. WOW. This was absolutely delicious and I already can't wait to make it again. I think next time I will add some veggies - zucchini, squash, spinach. The possibilities are endless. Thanks for the awesome recipe!

Salisbury Steak

I thought the sauce would be a bit too tangy for the kids but they loved them! And these kids are salisbury steak fanatics. They said it was better than the frozen junk I had been feeding them. Ha!

Baked Ziti I

This stuff is amazing! The sour cream sounded strange but I never alter the recipe the first time I cook it. I can't wait to make this again (and neither can my co-workers that I shared it with) ;-) **Updated: I made this again for a large group of folks and everyone really enjoyed it. I also add some chopped spinach to the sauce for more nutrition. My 16 yo is learning to cook and needs simple recipes to get started. So thank you to the original submitter.**

Easy, Cheesy Tortellini Bake

My boys LOVED this recipe and have asked for it more than once. I do agree with other reviewers, though, it needs more pasta. I have made it with italian sausage and without, and it doesn't add much to the meal so I'll skip it for the future to save on calories. Thanks!

Simple Hamburger Stroganoff

This was really, really good. I cook a lot of pasta dishes so I decided to serve it over brown rice, cooked separately. Otherwise I didn't change a thing. I had enough left over to serve the neighbors and they loved it too!

Mexican-Style Goulash

This was very tasty and so easy to prepare. I added a bit more chili powder (I don't measure stuff, just eyeball it) and a 16 oz box of elbow noodles. I put in extra water to compensate and also added a 4 oz can of diced chilies and 1 can of the diced tomatoes/chilies. Simple and filling.

Quick and Easy Grilled Potatoes

I tried these tonight and they were really tasty! At the end of the grilling time I put a handful of shredded cheese on top and closed the grill for a few minutes. Just like a loaded baked potato!

Spanish Rice Bake

This has become a staple in our home, we have it every 2-3 weeks. I typically try and use brown rice because it's healthier and sometimes use the Asian style chili sauce for its sweetness (to suit the kids' taste). We love this, thank you! **updated comments: why dirty 3 pans? Make it in a dutch oven or similar cast iron pan, brown the meat in it, throw all the other ingredients in, let it cook and then throw the whole thing in the oven. 1 dish to wash!**

Pesto Chicken Florentine

Hmm, let's see, I used a jar of alfredo and a "few" :) tablespoons of pesto w/basil. I doubled the amount of pasta and put in 2 bags of baby spinach leaves from the produce section. YUM! This was incredible. I think next time I'll try to add a bit of curry powder to give it the "florentine" flavor I'm used to eating. Thanks for the recipe!

Mulligatawny Soup I

I have made this three times now, it is definitely my favorite soup. The curry and apples makes for such a nice, warming sensation. It is absolultely delicious and I didn't change a bit of the recipe. Thanks!

White Chili

I made this for dinner and it got rave reviews (I used the Velveeta brand cheese). I made it again the next week for a work potluck and the kids were mad that I didn't bring home leftovers. There weren't any. :) **Update: instead of cheddar use a block of the Mexican velveeta, it melts very smoothly and gives is a very creamy spicy kick**

Not so Sloppy Joe Casserole

This casserole was delicious! Instead of the usual (robotic) "thank you Mom, this is good" I got "Wow! This is really good!" Hearing that usually makes my day and makes all the hard work worth it. I didn't change a thing. Thanks. :) **update** I've made this 3x now and we prefer the DelMonte brand sauce. It's got a little more "zing" I guess than the Manwich brand. Manwich seems a little bitter or something.

Chicken Fettuccini Alfredo

Very tasty. The only thing I changed was to add blackening seasoning to the chicken instead of Italian seasoning and I threw a bag of frozen broccoli in to boil with the noodles. Delicious!
