Savory Biscuits

Ever the pessimist, I was thinking "why put in an 11x17 dish? Seriously, cook for 25 minutes?" I am so glad I tried these. We have biscuits at least 4 nights a week and this was a wonderful change! Great with pasta. The butter made the biscuits crunchy on the bottom but kept them soft in the middle. The biscuits puffed up and fit the pan perfectly. YUM!

Salsa Chicken

This was quite delicious and I'm so glad I finally tried it. I did use 6 fairly thick breasts which had to cook longer, and dried it out a bit. Next time (and there will be a next time soon!) I will use smaller breasts or tenderloins to keep it moister. Yum!

Mexican Rice II

This was very simple and tasty. Like others have stated, its flavors are very mild and meant to accompany a main entree rather than compete with it. It complimented our spicy chicken very well. I was worried about browning and puffing but it turned out just fine. I'll definitely reuse this over and over. Thanks for the recipe!

Noodles Mexicana

This was just okay for me. I kept referring back to the recipe to see if I had left something out - it was a bit too dry for our tastes. I'm really a fan of 1-pot meals so I *wanted* to love it, but it was missing something. Not sure what. Maybe next time more spices and a can of tomato sauce. Sorry. :-(

Rice-so-Nice

I can't believe how simple and good this was. I don't like mushrooms so I left them out, and used 1.5c rice. No mess, no fuss and the family loved it. Not too salty; perfectly seasoned and fluffy. What more can I say? This will stay in our rotation. Thanks!

Sloppy Joes II

Later Manwich! I'll never buy it again. This was delicious! I used 1.5# meat and doubled the other ingredients (except used the original amount of brown sugar). I also squirted in some Baby Ray's bbq sauce and a bit of water to help it simmer. This was sooo tasty. My whole family enjoyed. Thanks!

Slow Cooker Turkey Breast

This was incredibly easy and sooo good! I did cut a lemon in half and stuff it in the turkey's...you know... Mine did come out a bit dry, but only because I was worried about undercooking (it was still a bit frozen in spots). Next time I'll thaw completely and follow the timing of the recipe. The drippings made into gravy on the stove with a little cornstarch was delicious as well. I'll definitely make this again and again!

Jambalaya II

This is, hands down, the best jambalaya recipe I've made. I have been making this one for a few months now (just realized I never reviewed it). It is WELL worth the time it takes to prepare. I never measure my spices and this dish allows me to do just that. I sometimes add in more rice, counter that with more fresh stock. More cajun seasoning, less cayenne, whatever we are in the mood for that day. It is also a relatively cheap meal if you consider how much food it makes (again, sometimes using more rice than called for). Leftovers are fantastic with a little broth splashed in while reheating. Pair this with some cornbread and you've got some full kids with warm bellies. :-)

Chicken Suiza Cornbread Bake

This is a really good way to use leftover chicken or turkey. Really tasty with a rotisserie chicken too. I like how the chicken layer kind of floats into the corn bread while it is cooking, so it's almost like stuffed corn bread (sounds weird, I know). Thanks!

Country Barbecued Chicken

This sauce was so much tastier than the bottled stuff you buy! It is worth the little extra time to prepare it fresh. I've always had a hard time keeping chicken moist on the grill. I think now the trick is the melted butter. This was moist and juicy and delicious.

Taco Pie

This is one of my favorite mexican-themed casseroles. Who doesn't love crossaints? It is easily adaptable to fit anyone's preferences. You can add corn, crushed corn chips, beans, really anything you like. I've made this several different ways now and haven't been disappointed yet. *Updated* This is how we like it best. Crescent rolls in a 9x13, topped with a cup of sour cream mixed with a cup of salsa. Next layer is mexican rice (from this site). Then is the meat browned with onion, mixed with taco seasoning and a can or two of rotele. Next are the black olives. Top with monterey jack/cheddar cheese and whatever leftover tostitos I can find. Delicious!

Pizza Casserole

This was pretty good. I doubled the amount of sauce and it was still a little dry. Kinda tasted like a boxed meal. That's not always a bad thing! But I'd like to experiment with this recipe quite a bit next time. Fantastic idea, great base recipe that I'll use and build on to suit our tastes. Thanks!

Glo's Sausage Fried Rice

Yummy, this was excellent! My only subs were about a lb of snap peas for the sprouts/peas and a little more soy to taste. I also cooked everything in 1 pot. Sausage - brown, scoop to plate. Egg - scramble, scoop to same plate. Then sautee veggies, dump in rice, dump in sausage/egg...done! Thanks!

Chili Dog Casserole I

I just came across this and realized I never rated it over a month ago when I made it. I had a large party where we had lots of leftover buns & hot dogs and this was perfect! The kids really enjoyed this meal. I did toast the buns for a bit in the oven before pouring on 2 cans of the hormel brand chili but otherwise followed the recipe. It's not something I'd make frequently but we did enjoy it!

Classy Chicken

This was a wonderful tasting supper! I doubled the wine/broth/sour cream and the extra sauce was so tasty. It was great to dip our bread in. Very easy with such a unique flavor. It's not easy to get my boys to eat baked/poached chicken but they were pleased. Thanks!

Baked Spaghetti

Mmm, this was ooey and gooey and full of flavor. Very filling, which is a bonus when you are trying to feed three growing boys. We loved this. The only minor change was to double the sauce. We'll definitely keep this in the rotation. Thanks!

School Day Biscuits

My kids gobbled these up! The only change I would make is to spray a generous amount of cooking spray to the cookie sheet, the sugar tends to get gooey and my biscuits stuck to the pan. Delicious and easy!! :)
