My favorite things to cook
I'm not really much of a cook. If it comes in a box I can tear it up! Otherwise, I'm not making any promises LOL! My problem seems to be that everything seems to taste better when someone else makes it! But, I am trying and that has to count for something. I'm mostly looking for recipes that are quick, easy, few ingredients, and not a lot of clean up. And of course healthy as my husband and I need to shrink our waists!
My favorite family cooking traditions
Making Christmas cookies with my mom. It is a tradition that I'm ashamed to say I have not really started with my daughter yet (well we did decorate together but my friend made the cookies). I think I'm afraid the cookies won't turn out or it's too much for me to take on. Silly really. Ok, it's on my list of New Year's resolutions for next year!
My cooking tragedies
The first time I ever tried to bake a pie was a pumpkin pecan pie. I cooked it for what seemed like hours and it never set. Then, it ran over the edges and burned in my oven, because I wasn't smart enough to put a cookie sheet under it. So, two pies ruined, a messy oven, and a stinky kitchen!

Egg and Sausage Casserole
This is my go-to egg casserole! It comes out great every time and it's very easy to interchange ingredients with whatever you want. I've made it with sausage and also with bacon and both were a huge hit! Initially, I was a little leery about the oregano but that is what I think really makes this recipe!

Caramel Chocolate Corn
This caramel corn is delicious and so easy to make! I used an air popper to make the popcorn (did not add salt or butter) and used semi sweet chocolate as suggested in another review. If I made it again exactly by the recipe I think I would use the milk chocolate instead. But actually, if I make it again I will most likely omit the chocolate entirely or maybe try to add M & M's after the microwaving. The caramel corn by itself was the bomb! I made three batches and was able to put together 15 gift bags for Christmas treats for family (after what was eaten of course!). And I did use my microwave as the recipe called for and it turned out perfectly. So easy!

Garlic Cheese Chicken Rollups
Yummy! Even my husband loved it! I made it with Philadelphia brand Cracker Spreads, Parmesan with Garlic and Herb cheese spread. I also put shredded mozzarella cheese on top of the cheese spread before rolling it up. And, I didn't have any bread crumbs so I crushed up some Butter and Garlic croutons instead. Turned out great! This recipe is a keeper! Update: I experimented some more and made it even better! We're currently on the Atkins diet so I tried 2 new ways to reduce carbs. For my husband I used crushed BBQ Pork rinds in place of the bread crumbs and for mine I sprinkled the chicken with Italian herb seasoning and parmesan cheese. For the filling for both I used plain cream cheese and white cheddar garlic and dill cheese. Excellent!
