Potato Leek Soup I

People mentioned that the soup might be too thick so I added 2 extra cups of broth. I thick 1 would've been sufficient. So good! Definitely make this one again.

Pumpkin Chili

I thought this sounded funky but wanted to try it. Glad I did. The pumpkin flavor wasn't very strong. I didn't add sugar b/c I assumed it really wouldn't need it. Second batch I made I added red pepper flakes which took over the that pumpkin flavor. First try, I used half a green pepper and it overpowered the chili.

Cinnamon Sugar Biscotti

Flavor is good. Simple to make. They crumbled apart when I was slicing them after the first go round with the oven. And I had to bake them longer than called for. They were too soft after taking them out the 2nd time!

I thought these were good. I skipped the microwaving part and just baked them. They never got crispy for me though. Great flavor! The 2nd time I made these, I mixed mayo with a southwest seasoning for a dipping sauce.

Spiced Applesauce Bread

Pretty good. I'll make again to see if the dryness was my fault with overbaking. I used 4 mini loaves instead of oen whole one. They were baked in 40 min. Probably could've taken them out at 35.

Pumpkin Pie Bars

Not really a fan of this recipe. They're too mushy for my taste. I baked them for an extra 10 minutes and still didn't firm up enough. They're better after they've been in the refrigerator. It helped them set a bit.

Texas Cowboy Stew

This was an easy recipe that turned out really well. It makes a HUGE batch though. You'll be eating off of for quite awhile. I used turkey kielbasa and didn't add the bag of veggies.
