Taco Bake I
This recipe was supposed to be an easy, inexpensive meal for my boyfriend and I one lazy tuesday night, and it turned into his favorite meal!!! He is a huge taco/burrito/nacho fan, and after eating this dish two nights in a row, he confessed that if we could have this readily available in the freezer, he would never go to another mexican resturant again!!
I just had to write and say how helful the other reviewers were, as I opted to mix the meat, rice, salsa, and cheese together and then bake (rather than layering). We ate the mix in a soft tortilla shell as a burrito, and also with chips as nachos to eat the next night.
I never thought such a simple meal would turn into a household favorite...but it was really a huge hit! Thanks for reminding me I don't need a 20-ingredient meal to make a delicious dinner. What a relief!
