Bandito Beans

I fixed these as a side dish to a brisket for my husband's birthday. They were so good the brisket paled in comparison. My husband asked me to add them to our regular menu as the main dish from now on. Perfect as is!

Creamy Vanilla Ice Cream

Incredible. I first made it for a cookout and I added a quart of fresh crushed strawberries. The next time I served it buffet style. Everyone agreed it was perfect without adding a thing!

Cake Balls

I used German chocolate cake and icing and these were fabulous. I won't freeze them first next time, though. The chocolate hardened too fast and made it difficult to work with.

Kentucky Burgoo

Great recipe. I am from Western Ky, but live in Eastern Ky now. This soup is only known in the Western area. I've never found anywhere else in the country that you can get it. Almost every large gathering in Western Ky features it and it is traditionally cooked in a cast iron kettle over an open fire. This recipe is slightly different than what I'm used to but was still very good.

Russian Mushroom and Potato Soup

Fabulous recipe! The whole family loved it. I used vegetable broth instead of chicken so my vegetarian daughter could eat it too, but left everything else the same. I served it with grilled cheese after a cold night at football practice. Perfect! Will definitely add this to my regular lineup.

Salmon with Brown Sugar and Bourbon Glaze

Love this recipe. Great way to get my family to eat their fish. My husband does not like fish, especially salmon. He loved this. I served it up with garlic mashed potatoes and green beans. Definitely a new favorite.

Southern-Style Crowder Peas

This recipe was fabulous and I even made it wrong! I could not find crowder peas anywhere, so I decided to substitute black-eyed peas. Unfortunately I had everything ready to go and realized I did not have black-eyed peas. I used baby butter beans instead and it was still wonderful. I served it with yellow rice. A big hit. I will definitely add this to my menu more often.

Corn Off the Cob Salad

This recipe has tons of flavor. It's almost like a relish. Great summer dish for bbq's or potluck. My husband does not like red bell pepper, so I used green, but it's otherwise perfect. Loved it.

Spaghetti Pie

I make this for my family all of the time. My daughter is a vegetarian and my husband and son are not. I double the recipe and make two; one with ground-beef and the other without. I freeze the leftovers individually for my daughter. It reheats beautifully.

Irish Cream Bundt Cake

I made this cake for a coworker's birthday that happens to be on St. Patrick's Day. What a hit!!! Everyone in the office talked about this cake for 2 days. My coworker liked it so well she's making it for Easter. I took everyone's advice and put the cake back in the pan with the glaze and it worked beautifully. No mess and no fuss. I will definitely be making this cake more often.
