These muffins are delicious! The only change I made was to use brown sugar in the topping. I also doubled the recipe and it made 18 regular sized muffins. I did end up with way too much topping, so next time I will half the topping recipe. The muffins are moist and have just the right amount of sweetness. I will definitely be making this again!

Quinoa and Black Beans

The only changes I made to this were to add a red bell pepper and to use only 1 can of black beans. It was absolutely delicious! The leftovers are great both cold and reheated. I will definitely be making this again, and I like the idea of doubling the recipe to have extra for lunch the next day.

Very Chocolate Ice Cream

Corn and Black Bean Salad

I made this recipe using a 15oz can of corn and adding a diced red bell pepper. I thought the balsamic seasoning was a little strong, but otherwise was a nice salad.

Chicken Enchiladas II

Delicious! I used 2 cups of chicken and added 1 Tablespoon of taco seasoning instead of garlic powder. This is a great recipe that is very versatile. I will definitely make again!

Honey Glazed Pea Pods and Carrots

I made this using only carrots and it was great! I used about 3 cups of chopped carrots. It was a nice way to add flavor to cooked carrots.

Amish Macaroni Salad

Italian Cookies II

These cookies were good. I accidentally forgot the vanilla in the cookies and they still tasted great. The frosting definitely adds a nice sweetness. Next time I might try thinning out the frosting to make more of a glaze.

Butternut Squash Soup

White Cheese Chicken Lasagna

This was excellent! I used 3 cloves of garlic and about 3 cups of chicken. There was a little too much spinach for my preference and I think next time I will use even more chicken. But other than that it was great and I will definitely make this again!

Bacon Quiche Tarts

These were easy to make and tasted great. I used more bacon than it called for and added half to the egg mixture instead of putting it on the bottom of the cup and it worked just fine. I will definitely make these again!
