Quinoa and Black Beans
The only changes I made to this were to add a red bell pepper and to use only 1 can of black beans. It was absolutely delicious! The leftovers are great both cold and reheated. I will definitely be making this again, and I like the idea of doubling the recipe to have extra for lunch the next day.
