Orange Loaf

MY NEW FAVORITE!! with an orange tree in the back yard, I am always trying new ways to use them. I made a loaf last night, and it was soooo good I made two more loafs! I added 1tsp of vanilla to the batter and an 1/8tsp to the glaze. It was magical! I'll making this weekly with my oranges.

Lemon Squares II

I am the queen of lemon square. I make them about once a week! for perfect lemon squares: 1. mix the flour and cold butter with your hands. once that is done add the p.sugar. I use a 9x9 pan. 2. only bake the crust for 15 minutes. 3. when making the filling I always add lemon zest. I use most of the lemon. I let my nose tell me it's enough. then I add all the juice form the lemon. 4. after I poor the filling into to hot crust i bake it for 20 more minutes. they come out PERFECT every time. even my friends that don't like sweets love these. they are so fast to make and i always have everything on hand.

Peanut Butter Banana Melties

To keep it simple for camping I use Reese's peanut butter cups. at home in the fire place, i try different things. Nutella being my favorite :)

Chicken Enchiladas IV

corn tortillas are the best for enchiladas. put a little veg oil in a skillet and warm up each tortilla before tiring to work with it. it sounds like a unneeded extra step but it will make all the difference.

Stuffed Peppers

so yum, i used ground sage sausage-that's what i had on hand. i used different color peppers. i cut out jack o lantern faces and places the pieces in the other peppers for a fun Halloween meal!

Halloween Bloody Baked Rats

soooo good and creepy. we don't have any kids in the house so it was fun to celebrate Halloween with food. i made cauliflower on the side for bloody brains and used the extra sauce from the baking dish. i also used g.turkey instead of beef. only thing we will do next time is smaller portions. wayyyy tooo much food. but it was delicious :o]

this came out great. i had boneless skinless chicken breast on hand and it worked great. very moist and flavorful. using the chicken breast made it very easy to cut and serve

Fresh Blueberry Pie II

such a great pie! this was my first time making blueberry pie with fresh berries over frozen, and it makes such a great different. i used a star cookie cutter to make stars for the top pie crust and placed them on top after adding the filling. it turned out beautiful. everyone at the 4th of july picnic loved it.

No Cook Icing

this turned out so wonderful! right at the end of beating i added just about 1/4 package of lime jello mix. it gave the icing perfect amount of a lime flavor and a beautiful light green color. you can mix and match different colors and flavors to get some really great tastes! i am not a fan of frosting, so this was perfect for me on cupcakes!
