Applesauce

This is a great base recipe to work off of. I doubled the cinnamon and added a dash of nutmeg. I used a mix of 4 different apples (can't remember what kind but 2 were red varieties & 2 were green varieties) and took the advice of waiting until the end of simmering to add the sugar. I wound up using a little LESS than 1/8 cup, significantly reducing the sugar! I found it sweet enough. I've made this twice. The first time I left it as is and enjoyed it's glorious chunkiness. The second time I was canning and planning to give it away to people who didn't care for chunky applesauce. At the end of the simmer I dumped 2/3 of it into a blender and blended until smooth. Then I added the remaining 1/3 so there was just a slight chunk reminding folks that what they were eating was handmade ;-)

Portobello Mushroom Pasta

This was a very good, easy, light vegetarian dish. Like others, I also added red onion and Italian seasoning. I only had a half a box of the bowtie pasta, which ended up being plenty. It made 3 large servings, or 4 small portions.

Quick and Easy Home Fries

These were VERY good, I used petite white potatoes and Whole Foods All-Purpose Seasoning in addition to a lil salt & pepper. These were awesome!

Fish Fillets Italiano

I found this bland, even though I followed the directions to a T (I used cod and also took the suggestion of using the diced tomatoes with Italian seasoning). It was edible but there was nothing special about it in the least. I think this recipe has potential though! Next time I will try it with a more flavorful type of olive instead of the canned black and maybe throw in more herbs.

Simply Parmesan Chicken

turned out very very tasty. i love that it's light and not fried. i substituted italian bread crumbs and cut the italian seasoning in half, and the overall seasoning came out just perfect! will definitely be making this again.

Rosemary Pasta in Roasted Garlic Sauce

This recipe was a huge hit! My friends said it was restaurant quality! I did change a few things thought. I used garlic powder instead of cloves and it turned out fine. I also added chicken. I cut it up into bite sized pieces and cooked it most of the way through, then added it when I added the chicken broth (I used canned Swansons-I'm such a cheater!)
