About this Cook
My cooking triumphs
The most memorable one is the Green Chile Soup I came up with that's as close as possible to the one I ate at a Mexican restaurant. Glory to God!
My cooking tragedies
Glad I don't remember them all. : )

Eggless Peanut Butter Cookies
This recipe came up in search for desserts with no eggs. I needed to make something that was quick and easy with just a few ingredients I had on hand. My taste-testers liked these cookies! After reading some reviews, I decided to bake them at 165* and baked one "drop" style without flattening which turned out well. Since they were for a church event, I formed the rest with a small scoop (like a little ice cream scoop) so they would be uniform in size and shape. There was no problem with dough sticking to the scoop, and pressing with a fork would have resulted in too-flat, possibly burnt results. They only baked about 8 1/2 - 9 minutes. Hope this info helps!

Healthier Banana Banana Bread
Very tasty. I made 1/2 the recipe with two medium size bananas, and baked muffins. Only a 6-muffin tin would fit in our little toaster oven so there was some batter left over, but I believe the 1/2 recipe would have made 8 regular size muffins.

Fluffy Pancakes
When my husband took the first bite, a look of pleasant surprise came over his face and he said it tasted like restaurant pancakes! He asked me to mark this recipe so we can make it again. I confess to using a smaller amount of brown sugar instead of white, but either way it's a five-star recipe!
