Baked Zucchini Squares

I've prepared this recipe countless times and every time i'm amazed at how delicious it is! It comes out perfect, even when I don't add in all the herbs/seasonings it calls for.

Zucchini Cornbread Casserole

Great recipe. I followed some of the suggestions of other users such as browning the onions/garlic to soften them up, and added a bit more cheese and added one shredded carrot for color. The casserole was initially runny when I took it out of the oven after 60 minutes, however, once it cooled off it firmed up very nicely and turned out delicious!

Tequila Lime Shrimp

I think the measurements are off - 1/4 cup of salt is way too much. This already has lime & vinegar so I reduced the salt to 1 teaspoon and reduced the oil to just 2 tablespoons. With those modifications, I was still left with lots of marinade left over, which I simply cooked and poured over some white rice. Very tasty!!

Amy's Cilantro Cream Sauce

Delicious! Only change I made was to add two garlic cloves and wow! Great as a dip, or spread. I used it as a sauce to go with the Tequila Lime shrimp also found on this site.

Grilled Apple and Swiss Cheese Sandwich

Great combination of flavors. The tanginess of the Granny Smith apple magically disappears and becomes "one" with the other flavors. Can't describe it really, but it really is delicious and I agree with the contributer of the recipe, you have to do this on wheat bread. Tastes so much better!

Apple Ham Grilled Cheese

So delicious! I didn't add the ham, but the combination of the cheese/apples on a grilled sandwich..yummy! Filling all on it's own or maybe a cup of soup for a heartier dinner.

Slow Cooker Honey Garlic Chicken

The chicken was way too sweet, I couldn't taste the garlic at all and chicken was dark, almost black, and rubbery. The only things that I did different were to reduce the honey to 1/4 cup and increase the garlic to 6 cloves and still it was too sweet and overall disappointing. I don't think i'll be trying this again anytime soon.

Crumb-Coated Chicken Thighs

Great recipe to use with the ingredients you have on hand. In my case, I didn't have prepared bread crumbs, so I made my own by toasting four slices of wheat toast then crumbling them once they'd cooled off. The recipe has a lot of room to experiment. I added some curry, a dash of garlic salt and some thyme..yum! The cooking time was a bit longer than stated, it took at least 60 minutes of baking time for the thighs to be ready. Chicken came out perfect, juicy, tender and full of flavor. I highly, highly recommend this.

Ranch-Style Thighs

Great recipe!! I did everything exactly as is but at the cornmeal as I didn't have any and it turned out delicious! I did it with the skin on this time around, but next time i'll prepare it with the skin off since most of the yummy crunchiness stuck on the skin. Chicken came out moist and flavorful.

Tuna Cheese Mac

Good base recipe, there's lots of room for your own touches. I added some roasted garlic, used Velveeta and left out the milk/butter. Cottage cheese took forever to melt, but once it does the flavor is really tasty. Hubby thought it was ok.

Clemons Family Bean Dip

What a great recipe! I followed the suggestion of another user and used chorizo - mexican sausage - instead of the ground beef and wow! This a great "guy" dip. Only thing is that the dip does get a little dry after it cools down, but other than that hubby and pals rated it a 5 star winning recipe.

Chicken Alfredo

Great base recipe. You can modify to your liking - I prepared it omiting the butter, milk and onion powder and instead substituted fresh garlic and a whole package of cream cheese. I used roasted red/green bell peppers. Using these few changes gave the dish a whole new dimension and my husband loved it! Thank you!

Great recipe, super easy to prepare with just a few ingredients. We served it as an appetizer for a dinner party and these got more attention than anything else! Prepared the recipe as indicated, made no changes. Next time i'll try the maple syrup suggestion.

Triple-Layer Eggnog Pie

Great recipe, easy to make! I didn't have eggnog, so I made it simply with the vanilla pudding layer on the bottom, a cream cheese/whipped topping layer in the middle and another layer of just plan topping on the top sprinkled with coconut. Yum! Everyone loved it!

Great recipe! Easy, fast and excellent when you want to impress guests with something tasty. I didn't have to use toothpick because the bacon stuck in place and the edges that did come off became extra crispy. Yum!

Aunt Mary's Eggplant Balls

Unbelievably good! I modified it so that it looked like meatballs, put a little bit of mozarrella cheese in the middle and fried it in a bit of EVOO. The result was a delicious subsitute for meatballs - great in sandwiches. Thank you Aunt Mary!

Eggplant Croquettes

So tasty! These are awesome. My hubby isn't a fan of veggies of any kind but even he had to admit that these could pass for a burger with a few modifications like adding breadcrumbs and a little bit more cheese. Overall, great and creative use of eggplant.
