Hummus III

Tried this recipe based on the reviews and agree with most, excellent as written and a great base to change it up according to your tastes. I added a bit more garlic and more lemon juice. The flavors were intense at first but after letting it sit in the fridge overnight, the next day the flavors had mellowed out and were outstanding!

Honey Mustard Chicken

I prepared the ingredients exactly as stated. The only changes I made were 1) to use chicken thighs instead of breast 2) because of the lack of time, I did not get a chance to marinate them. Despite these changes, the chicken came out beauitfully browned, with the hint of mustard, sweetness from the honey and the boldness of the curry just rounding out the taste. My husband is not a fan of "sweet" entrees, but he loved this chicken. And it was so simple to make!

Mini Cheesecakes III

Great base recipe! Followed the recipe exactly and it made six beautiful cheesecake cupcakes. The consistency was creamy and sweet. The only thing I would change is to reduce or eliminate the lemon zest and/or juice. It came out too tangy. Other than that, great base recipe that you can change to suit your tastes!

Peanut Noodles

Great recipe! I loved the taste/smell of the fresh ginger with the peanut butter. I used whole wheat noodles and although I didn't have any green onions on hand the white onions worked just fine. I added some chopped serrano peppers for heat (we like it hot!) and followed the rest of the recipe exactly. The reason it it did not get five stars is that the sauce was thick and hard to work with when adding the noodles. I had to add more water to it so that it could dilute the sauce and cover the noodles. Other than that, the outcome was very impressive.

Spicy Chinese Barbeque Riblets

OMG, this is so tasty and so easy to prepare! This is my first time preparing ribs of any sort and they came out tender, juicy and super flavorful with the sauce. I made everything exactly as indicated with the only change being that I reduced the wine by a bit only because it would make the sauce too watery. Other than that, followed the recipe and the results were great.

Beer-Boiled Shrimp

My hubby prepared this for our monthly Family Night dinner and it was a hit! He prepared it exactly as written, used cheap beer and let it sit for a while longer than indicated. The shrimp were tender - mind you we used frozen shrimp - juicy and oh so perfect! Don't let the nutrition facts scare you, the buttery sauce is well worth it. My only suggestion next time would be to try adding some garlic and a little bit more salt to the dish. Other than that, excellent dish and super duper easy to prepare!

Impossible Coconut Pie I

The consistency and the look of the pie was great - even I was impressed at how pretty it looked! But the taste was so-so, maybe it was the ingredients I used but it tasted kinda of rubbery and the hubby commented on the bitter aftertaste. I'll keep toying with the ingredients and hopefully will get something better.

Creamy PHILLY Chicken Pot Pie

Delish! The only change I made was to not use the herb cream cheese, instead I added my own herbs including garlic powder and a bit of celery salt. Other than that, I followed the directions exactly and the results were a cream, cheesy chicken mixture with lots of flavor inside a flaky, buttery crust. Yummo! BTW, I used Pillsbury Pie crusts.

Roasted Brussels Sprouts

Amazing! I used garlic salt and olive oil, roasted them in our countertop oven and voila! When I took them out, I sprinkled a bit of Parmesan Cheese. The olive oil helped the cheese stick to the sprouts creating this delicious, decadent coating on them. That complemented with the crunchiness and sweetness of the sprouts made for an awesome dish. I had it twice this week and just thinking about it them is making me hungry for more!

Garlic Cheese Bread

I served this at a dinner this past weekend and my hubby could not stop raving about it! We love, love, love garlic so we added 1/2 tsp more garlic and put it in the food processor to finely chop it. It cooks great with the mayo/cheese mixture and put it in our countertop roaster oven for 10 minutes using the dark toast option. The end result was this garlicky, cheesy bread with just the right amount of crunch to it. Amazing stuff!

Pumpkin Crumb Cake

Thank you for such a yum recipe! The only changes I made were to add cinnamon, nutmeg & allspice (just a pinch) & a teaspoon of vanilla to the pumpkin mixture and reduce the sugar since the cake mix is always already super sweet. Hubby pronounced this as one of the best pumpkin desserts i've prepared so far.

Cream of Tomato Gorgonzola Soup

Delicious! I did doctor it up a bit though by combining several recipes from this site. I used fresh basil, used fresh tomatoes (boiled with onion, garlic, oregano) and used cream cheese instead of milk to make the soup creamier. The gorgonzola complimented the flavors wonderfully and my hubby who normally does not like gorgonzola loved this soup!

Sausage Jalapeno Poppers

The only change I made to this was to use mexican "queso fresco" so that it wouldn't ooze out when cooking. The results were phenomenal. My family could not stop raving about them, including those that don't particularly like jalapenos. Some of them did turn out a bit spicy, but nothing that couldn't be handled.

Award Winning Peaches and Cream Pie

I tried this out on our monthly Family Night and everyone loved it! I took the suggestions of others and baked the "crust" for 10 minutes or more, and once it had firmed up a bit, took it out of the oven and after it had cooled off (about 5 minutes) I brushed egg on top to create a barrier between the crust and the peaches. I put it back in the oven for another five minutes and took it out again and followed the rest of the recipe as indicated. Once it was done, I let it cool off and refrigerated it overnight with awesome results. The crust was tasty, not too sweet, and the combination of peaches with the cream cheese was a big hit. A bit time consuming but the results are worth it.

Gooey Butter Cookies

Great cookie! My only change was to not add the powdered sugar..they're already sweet as it is. Other reviewers mentioned that the cookie is more like a cake texture and they're right. The only time it's gooey is straight out of the oven. Letting the cookie cool for five minutes after taking it out of the oven really enhances the flavors. The baking time is just perfect.

Banana Oat Muffins

These muffins are quite tasty. I reduced the sugar to 1/3 cup because the bananas I had were quite ripe and I didn't want it to be too sweet. Right before popping these into the oven, I added a crumb topping consisiting of oats, brown sugar, cinnamon and butter. This made the presentation and the taste of the muffin great! My only concern was that it tasted too much like the baking soda, but I probably just overdid it with that. Overall, great recipe to keep when you want to make banana muffins from scratch.

Garden Cheese Soup

Great base recipe! I used what veggies I had in the fridge and it turned out tasty. Even my husband who doesn't like vegetables at all approved of this soup. My only change was to sautee three cloves of garlic along with the onions and celery. Other than that....yummy!
