Shredded Beef Enchiladas

My first time attempting Mexican. We've been in West Texas for a year now, so I figured I better learn! Definitely took me a very long time to make, but was worth it. Kept everything the same, just used some store bought enchilada sauce. Thanks for sharing!

Sea Bass Cuban Style

Seven Layer Taco Dip

Excellent! Left out the green peppers due to personal taste, but everything else was kept the same! Was gone just as soon as I put it out for a Super Bowl party. A definite keeper!

Maple Dill Carrots

This was unbelievably good! So easy and I always have these ingredients on hand. My 3 and 1 year old loved it too. Who knew that these ingredients would come together to taste so good? Followed this exactly. Thank you so much!

Charleston Shrimp 'n' Gravy

Ok...the roux was easy to make. But I agree with some other reviewers that this was too bland. I had to add some Old Bay to it. I guess it just wasn't what I was expecting.

Grilled Salmon I

Excellent...followed another reviewer's suggestion to make a foil pouch for the fish. It was wonderful although I did cook it longer than was suggested. The best part was that the skin just stuck to the foil after it was done!

Caribbean-Spiced Roast Chicken

This was one of the moistest chickens I have ever made. However, it was also the most bland. It didn't seem like any of the spices actually got through to the chicken. I will probably not be making this again.

Awesome! Served with mixed greens, gorgonzola, blackberries, and walnuts. My 2 year old was dipping her lettuce in this before she ate it. Didn't change a thing!

Grilled Tilapia with Mango Salsa

I made this a couple of days ago. My 2 children ate most of the fish before my husband even got home. He loved the salsa though! Followed this rcipe to a T and turned out perfect!

Original Homemade Italian Beef

This was absolutely delicious! I was very hesitant to use so much Italian seasoning (it came in 0.6 oz. pkgs at the grocery store so I had to add 5 to get 3 ozs), but I am so glad I did! The meat was so tender and delicious! I added my pepperoncini an hour before it was done cooking with its juice. The beef was pretty spicy, and I couldn't give it to my 2 year old, but the husband loved it. I would make this again but I wouldn't add the pepper juice!

Guinness® Corned Beef

Made this for St. Patrick's Day and it was sooooooo good. I used a 3 lb. roast and cooked it in the crock pot all day. Turned it up to high for the last hour and a half after I added potatoes and carrots. I cannot even describe the flavor, but it was so rich and yummy. I plan to use this recipe for many years to come!

Russian Mushroom and Potato Soup

This was really good hearty soup! My husband is from the Ukraine and he had two servings. I did add more chicken broth to mine because my husband likes it thinner and I increased the spices to compensate. I let it sit for awhile after I put the mushrooms as suggested by another reviewer to get more mushroom flavor. I really don't think the half and half/ flour mixture is even needed to thicken this soup up. I will be making this recipe again!

Italian Spaghetti Sauce with Meatballs

This was so good and easy! I made the meatballs ahead of time an just threw them in when it was time. Be sure to buy very lean ground beef as it can make the sauce slightly greasy. Just think of all the grease on the pan when you bake meatballs and then think of it in the sauce. I am giving it 4 stars because it was delicious and simple to make if you subtract the time it took to strain a lot of fat off the top of the sauce.

Puppy Chow

I can't get enough of this stuff! I made it for my daughter's Valentine's party at school. I added 1/4 cup butter to the peanut butter and chocolate recipe and melted it in the microwave. I coated the cereal with the mixture using gloved hands (easier than a spoon), then laid it on wax paper for about 30 minutes. I only used 1 cup of powdered sugar and that was more than enough to coat it! Will make this for many years to come.

I don't know if I did something wrong, but my crepes can out way too rubbery. The only changes I made was to add 1 tsp. of vanilla. Will keep looking for crepe recipes.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Made this for Valentine's Day. I did not like the sauce. Personally, I would reduce the amount of thyme if I would make it again. Filet mignon does fine on its own, but after trying some other recipes like "Beef tenderloin with roasted shallots" from this site, this one is just okay.

Easy Sugar Cookies

Even though I read over and over that this was not a good recipe for cut-outs, I decided that I liked the recipe and would try it anyway. The result was the best sugar cookie I have ever made! I made the dough as written and then let it chill in the fridge for 5-6 hrs. I let it warm to room temp. and kneaded it for a while. Perfect consistency to make cut-outs. I only baked these for about 7 minutes. I love these because they stay chewy and don't get rock hard like the others. I am very excited about this recipe and will use it for all my holidays cookies. I used "Luscious Buttercream Frosting" from this site as suggested by another reviewer and it was fabulous.
