About this Cook
I'm an in-between-er. Just (a couple of years ago) finished college and working on figuring out which dream to follow. I love great food and strong drinks and try my best to enjoy as much of them as I can while staying within my means. I'm also into art, sewing, reading, camping, swimming, trashy reality TV shows, the ocean(although I live too far from it now) and just lazing about. Oh did I forget to mention? Cheese is my chocolate!
My favorite things to cook
Enchiladas, hands down. They are deceptively easy to make from scratch and you gotta love their spicy, cheesy goodness.
My favorite family cooking traditions
Barbeque, steak & martini Christmas and of course pumpkin pie.
My cooking triumphs
The first meal I cooked for my boyfriend: broiled tilapia and twice baked potatoes. Not only did he go back for seconds, but I was amazed that I didn't burn the house down (see below) or poison him. I realized that maybe, just maybe, I really could become a good cook, which I have been working on ever since.
My cooking tragedies
When I was sixteen I left a pot of gravy on the stove to warm, went out to the garage for a chat with my dad and completely forgot about it. When I finally went back inside I couldn't see ten feet in front of me. We had to call the fire department to fan out my step-mother's house. Needless to say, this made me wary of any kitchen activities for quite a while.

Shredded Brussels Sprouts
This recipe makes me wish that I had never given five stars to another recipe. It is so perfect as is that it makes me want to use expletives. I cannot believe I just said that about Brussels sprouts.

Red Lentil Curry
This was very tasty. I wanted do fit some veggies in so I added spinach. I also like my curries with yogurt so I added a couple big spoonfuls of that. I also think that it should have more curry paste, garlic, ginger and a touch more sugar than the recipe calls for.

Cheesy Quinoa Pilaf with Spinach
I am always looking for new and creative quinoa and couscous recipes to try and this was a great inspiration, which is why I am giving it five stars despite the fact that I didn't necessarily follow the recipe. I used less olive oil, more spinach, no lemon juice(which I would have liked to use if I had it on hand), plain goat cheese and pine nuts. It was really delicious. The toasted pine nuts flavored the whole dish with a unique and tasty nutty flavor. I am looking forward to trying the original recipe and some more variations.
