Leftover Casserole

This recipe was delicious! I precooked the macaroni a bit (boiled 5 minutes of the 7-8 minute box directions) to avoid the problems other people had where the macaroni took longer to cook. I omitted the vegetables since I typically don't like everything all mixed up and just served them on the side instead. The ham gave it a really good flavor... yummy!

Best Ever Sloppy Joes

This was delicious. After I made it, I was afraid the kids would balk at the amount of green pepper since that is one vegetable they don't like, but they never said a word and gobbled it down and even asked for seconds! I only had one can of tomato soup, so I substituted Ketchup and a squeeze of yellow mustard for the remaining 1/2 can of soup. I will definitely make this again.

Flax and Sunflower Seed Bread

Delish! I had never had flax seeds before, but I keep hearing how good for you they are, so I tried this recipe. Next time I might trim back the ingredients slightly because the bread rose all the way to touch the top of the machine. My machine says it holds a 1 1/2 lb loaf.

Annie's Fruit Salsa and Cinnamon Chips

I served this for a party and it was delicious! Since I didn't have any butter flavored spray, I brushed melted butter instead which was easy and worked great. I only used about 1/2 cup or less of the cinnamon sugar - the 2 full cups would be way too much. I served the leftovers over belgium waffles in the morning. Delish!

Zesty Slow Cooker Chicken Barbecue

This had a really good flavor, and even the kids gobbled it up. I only gave it 4 stars because it was too runny. Some suggested that once you shred the chicken and add it back the crock that it wouldn't end up watery, but mine did not. Serving with a slotted spoon worked out pretty well.

Mild Cheesy Chicken Enchiladas

These were pretty good, but not spectacular. In an effort to reduce the fat content, I used lowfat sour cream. I had trouble getting the cheese to melt into a good consitency, and wonder if maybe it was because of the lowfat sour cream. To get around it, I had to add a few splashes of milk.

Bean and Tomato Stew with Sage

Curried Pumpkin Soup

Loved it! This recipe is different than any soup recipe I've ever made. I like to try new things and was curious how a pumpkin soup would taste. Mine wasn't too sweet as some people thought. I was trying to use up apples leftover from apple picking, and since I believe McIntosh apples are a bit tart and pretty small, I used some smallish winesaps that are semi-tart. Some reviewers thought it needs cream, but that is what the dollop of sour cream/yogurt (at serving time) is supposed to accomplish. Instead of doing that, I opted for adding 3/4 cup of cream to the recipe which I added near the end of the cooking time. Oh, I didn't go through the trouble of putting the soup in the food processor - I used my immersion blender and it worked out fine. Delish!

Turos Csusza (Pasta with Cottage Cheese)

I stumbled upon this recipe after entering an ingredient search with the very limited ingredients I had on hand. My seven year old is rating it four stars and wants to say "this is a very good recipe and I want to have it again." I will make it again because it was very easy and kid pleasing. Next time I will add more bacon.

Pineapple Chicken

Not bad, but not really the flavors I like together. I only sought out this recipe to use up some fresh pineapple I had in the refrigerator. The kids didn't like it very much. I added a bit of cornstarch at the end to thicken up the sauce.

Pasta e Fagioli III

I doubled the recipe because I had such a meaty ham bone and used dried canellini beans. I thought the broth was weak, so I added some ham buillion. It was pretty good, but it seems like it could have been better. Maybe it could use some Italian Seasoning. We added parmesan cheese at the table.

Michelle's Coconut Chicken Curry

We loved this dish and made it exactly as the recipe stated. My 7 year old son even said "Delicious, 5 stars, Can we have it again?" Can't beat that! UPDATE: I keep making this because it is my daughter's favorite recipe. Tried the light coconut milk and think it was better made with regular. Would like to add small diced potatoes next time.

Basil Burgers

Great, easy recipe. The kids gobbled it up. I used about 1/4 cup fresh, chopped basil and topped with shredded mozzarella at the grill. I also mixed up some pesto mayo per someone's suggestion which I made with approximately 5 parts mayo to 1-2 parts pesto (from a jar) and a smidge of dijon. Delish.

Slow Cooker Buffalo Chicken Sandwiches

This recipe is a keeper. It was very easy and good. My batch was a little salty as others commented, but I didn't notice that until after I added the butter. Maybe try unsalted butter if you have it. I wouldn't skip the butter because, despite the saltiness, it did improve the flavor and made it seem more like wings.

Spanish Rice II

Very good. My 7 year old son has been my advisor on the ratings. It was almost too spicy for him, but he decided it still deserves all 5 stars. I agree. I omitted the green pepper and substituted broth for the water, but measured slightly under the 2 cups to adjust for the liquid in the tomatoes. However, my 6 year old did not prefer it at all.
