Sweet and Sour Pork Patties

We love this. I made a homemade, but simple sweet and sour sauce from this site, called Sweet and Sour Sauce I, to save money on buying a jar and it was delish! All the kids ate well.

Laura's Unbelievable Chicken and Pasta

We all loved this and it was so easy! I went ahead and made some enhancements per others' reviews: onions, mushrooms, baby carrots (finely julienned to be hard for the kids to pick out), and a half a bag of fresh spinach instead of frozen. I didn't have cherry tomatoes, so I diced 2 regular instead. I used Neufchatel, low fat cream cheese. I forgot to add garlic with the onions which I intended to do, but I really didn't miss it. I will make this again.

Sausage Potato Stuff

Nice and easy dinner that went over great with the kids. I doubled the recipe with the exception of the green chilies. I was a afraid they would be overpowering, but at half what was called for, they were't all that noticeable. Next time I will use more. I baked it in the oven, so I could "fix it and forget it." I took about 45 minutes for the potatoes to get tender (but, keep in mind I doubled the recipe).

Curried Coconut Chicken

This was really good and very easy... plus, a hit with all the kids. Though, I did change one thing. I cut back on the sugar to 2 T as 3 seemed like too much. Next time I will reduce it further because it was still pretty sweet.

Baked Ziti with Johnsonville Italian Sausage

This was pretty good. I added about half of the wine it called for based on the comments by another reviewer that the wine was overpowering. I added a pinch of dried oregano and about 3/4 teaspoon of sugar to make it not so acidic.

Cheeseburger Soup I

My son rated this 10 million stars and said it was the best soup ever... and I make soup A LOT. I used ground turkey which cut down on the grease with everything getting sauteed all together. I doubled the recipe and cut back on the cheese a bit - instead of 4 cups, I used 3. I also added some salt, pepper, and about 1/8 teas. cayenne.

Gourmet Chicken Sandwich

My family really enjoyed the mayo/dijon spread. I enhanced it by adding some garlic powder and a tiny bit of cayenne just for flavor, not for heat. We wanted to grill the chicken, so I felt like just peppering it wouldn't give it enough flavor. I marinated it for a half hour in the marinade recipe from 'Marinated Chicken Pita Sandwich' also on this website which was yummy.

This was ok. Something easy to serve the kids. I omitted the corn and used cheddar instead of parmesan. It needed salt. We added garlic salt at the dinner table, but if I make this again I will stir it in ahead. It probably would have helped if I had salted my noodle water.

Italian Hot Turkey Sausage and Black-Eyed Peas

My 12 yo son went crazy over this. He said it could be a lot worse, but still be really good... hmm, I'll take it. I used regular Italian sausage and added red pepper flakes for some heat. I used angel hair pasta and simmered it, covered, until the broth was mostly all soaked up.

Mexican Lasagna

Simple, but really good. I didn't have Colby so I used a mix of Monterey jack and cheddar. I only had 8 corn tortillas, so I tore some up to make for a perfect fit. This gave me the perfect amount of corn consistency.

Black Bean and Corn Quesadillas

These were good. I only added a teaspoon of brown sugar and half of the corn. After tasting the bean mixture, I was still concerned it may be too sweet, but once they were all made up, they didn't taste all that sweet. I also added some chipotle peppers and chopped chicken.

Slow Cooker Chicken Chili with Greens and Beans

This was really good. I added garbanzo beans along with the white and black beans, one can of each. Kale would've been good, but I didn't have any so I used frozen collard greens instead. I sautéed garlic with the onion and added frozen chicken breasts straight from the freezer. I don't have any garlic and herb seasoning (and have no idea what's in it), so I generously added some garlic powder and a sprinkle of oregano.

Caribbean Zucchini Bread

This is delicious! Though, I intended to add a teaspoon of coconut extract, but accidentally added almond extract instead. Oops, I realized it and then added about a 1/4 t coconut extract (that's all I had). Surprisingly, the flavors turned out amazing. Usually I omit nutmeg in recipes like this, but went with a scant 1/2 teaspoon.

Italian Chicken Skillet

This was good and flavorful, though there wasn't enough liquid. I added about a cup and a half of chicken broth continually as needed when it was cooking. I didn't have red wine, so I used white which was very good.

Playgroup Granola Bars

I've made these several times and love them! The recipe calls for wheat germ which I never have, so I substitute sesame seeds, flax seeds, and a little extra oats. I also sub out some of the regular flour for whole wheat flour. I use craisins instead of raisins, and of course, add chocolate chips as everything goes over better in my house with chocolate chips!
