Potato, Broccoli and Cheese Soup

This was good. I used chicken broth instead of water and bouillon. It needed about 1 teaspoon of salt, a pinch of cayenne, and some garlic powder. To make it creamy I added a can of evaporated milk.

Jamaican Tortilla Soup

Very yummy for me and all my kids. I used a whole can of coconut milk instead of 1 cup. I used one can of ro-tell tomatoes instead of the fresh. I also took some other reviewers' advice and added rice, which amounted to about a cup which I put into the pot with the carrots and onion (I added this based on another reviewer). We like spice, so I added a pinch of cayenne which really boosted the flavor as well as a bit of fresh cilantro. This bright green really made the soup look more appetizing. The mozzarella on top worked well with the coconut.

Seven Layer Tortilla Pie

This was good, but I have some recipes I like better that are similar in concept, but spread out over a casserole. I took it out at 40 minutes like the recipe states because I had some hungry (and demanding) kids, but it should have cooked about 10 more minutes.

Grandma's Chicken Noodle Soup

Great soup. I save myself a step and an extra dirty pot by bowling the noodle in the soup at the end. The starch from the noodles makes it just as thick as the addition of cornstarch.

Pasta/Pizza Sauce

I wasn't so sure about this while making as it turned out really dark in color. Not sure if that is just my particular can of tomato paste or what, but on the pizza, it was delish! I used the full amount of sugar (tried less, as people suggested, but kept adding it until I got to around the 2 teas that the recipe calls for.) I let it simmer for about an hour or more.

Slow Cooker Lemon Garlic Chicken II

This was good, but it was done in only about 3 1/2 hours on low! Thank goodness I checked it. I think it may be because my chicken breasts were small and got mostly cooked through in the browning process. Unlike many reviewers I left the amount of liquid the same, which was a fine amount for the cooking process, and at the end there was a little more from the juices. In my opinion this was the best part, served over rice.

Chicken Delicious

The kids really like this. I used frozen chicken breasts right from the freezer (does not even take longer to cook) so I didn't brown them or season them. I put all the seasonings with the soup mixture and used less chicken than it called for because I basically just threw my chicken into the crockpot until I ran out of room. Since it was so saucy at the end, I cooked egg noodles very al dente and added them to the crockpot to finish there. I did this after the crockpot was off. They soaked up much of the sauce and was very tasty that way.

Mini Pumpkin Butterscotch Muffins

These are good. I used 2 teas. of pumpkin pie spice instead of all the others. I thought the butterscotch chips went well, it is just the kids don't prefer the flavor and asked me to use chocolate chips next time. I did not get 48 mini muffins out of my muffin pan, rather only about 30.

Cranberry Chicken II

This was pretty tasty, but I docked it a star because the one hour listed for the cooking time is way too long. I checked it after 45 minutes and it was already a tad overcooked. I don't normally have french dressing, so I found a recipe from this website to make, which was pretty simple.

Peanut Butter Cup Bars

I really like this recipe. I like the crunch of the graham cracker bottom which was incredibly simple to do, especially since I always have graham crackers on hand, but not graham cracker crumbs. I took the advice of a couple of reviewers since it was a repeating concern that they cracked while cutting: #1 I stirred in about 3-4 T of peanut butter into the chocolate to melt together in the microwave which made the crust not so brittle, and #2 I cut it with a pizza cutter which worked famously.

Puppy Chow

Yummm! We took this to a school event and it was devoured. I used a whole box of cereal, 1 whole bag of chocolate chips, 1 cup of peanut butter, and 3 cups of powdered sugar. I melted the chocolate in the microwave and added the peanut butter to that, then put that plus everything else in a giant bowl and carefully stirred, turning over from the outside in.

Roast Adobo Pork Loin

This was good, though mine ended up a little salty for I substituted regular seasoned salt for the Adobo pepper based on another reviewer. I had a very large roast which I started at 450 degrees and then dropped it to 325 after about 10 minutes. I was so tender this way.

Super-Delicious Zuppa Toscana

This was good, but not the best ever, so I withheld a star. I think I added too much broth for I didn't read that it called for the smaller cans of broth and not the 15 ounce ones. I think cannellini beans would have tasted good in it. I didn't bother with all the separate sautéing steps, rather I just sautéed the sausage for about 5 minutes, then added the onions for 5 minutes, and lastly the bacon, before dumping it all the rest of the ingredients on top. This worked well for ease and for flavor; the only thing that didn't go so well is that the bacon didn't get crisp this way. I also didn't totally boil it as the recipe states. Instead I simmered on low with the lid on.

My Trainer's Kale Soup

This was a good soup. I used frozen collard greens instead of kale which worked great. I docked it one star because I felt it was a little lacking as is. I added some oregano, a little basil, and some mini bow tie pasta which I feel really helped make it tasty. I didn't puree the cannellini beans ahead of time, rather I used my immersion blender to blend right in the pot (I did this step before adding pasta.)

Healthy Banana Chocolate Chip Oat Muffins

These are very good. I do not prefer apple sauce as it makes muffins sticky, so I used a 1/2 cup of vegetable oil instead. I shied away from the full amount of whole wheat flour, subbing in a little white flour, but I love the whole wheat flavor so much (kind of nutty), that I wished I just followed the recipe on that point. I think walnuts would be good. Oh, one more thing… where is the salt in this recipe? I added a 1/2 teaspoon which was good. UPDATE: I made these again with coconut, walnuts and a sprinkle of flax seeds. Delish! Be sure to bake until they get a little browned on top for it makes them taste toasty.

Sweet and Sour Pork Patties

We love this. I made a homemade, but simple sweet and sour sauce from this site, called Sweet and Sour Sauce I, to save money on buying a jar and it was delish! All the kids ate well.
