Chicken Tortilla Soup V

Very good. I used lime juice instead of lemon juice and substituted Chipotle chili powder for the regular, which made a little spicy, but good. Also, stirred in some avocado at the end.

Potato Minestrone

Very good recipe. Could use a little less spinach and I am not sure I liked the pototoes - would have preferred some type of pasta instead. I used cannellini beans instead of garbanzo since that is what I had and they worked out fine.

Broccoli Chicken Delight

I thought this was pretty good, but surprisingly it didn't go over that well with the kids. Next time I might omit the lemon juice. I used fresh broccoli and decide to steam it a little ahead to give it a head start, but this was a mistake as it ended up too mushy in the dish. Next time I will just add the fresh broccoli as is.

Wisconsin Cheese Soup I

We all loved this soup. The kids all rated it 5000 stars. Made it exactly as the recipe stated, but was sure to chop everything very small, especially the green pepper so the kids wouldn't balk.

Jim's Cheddar Onion Soda Bread

Very tasty. This was my first time making soda bread. I wish I had flattened the dough to more like 1 inch thick than 2, because I had a trouble getting the dough cooked in the middle. It took about 10-15 minutes longer than the recipe stated. I don't think all of my kids were crazy about the onion flavor, so next time I will try increasing the cheddar and omitting or lessening the onion. Also, my dough was very dry, so I needed to add 1/4 - 1/2 cup more buttermilk.

Colleen's Slow Cooker Jambalaya

Very good. Most of the kids loved it and rated it 5 stars. Hubby thought I should cut back on the tomatoes next time. Though, my chicken got done sooner than the green pepper and celery (and they were chopped small), so I spooned the chicken out and left it out for the last hour of cooking.

Cha Cha's White Chicken Chili

Very good. Very spicy, though, and I only added a pinch of cayenne not the whole teaspoon. I stirred in some sour cream (maybe 1/3 cup) instead of the cheese, and then added pepper jack cheese and crushed tortilla chips to each bowl

PHILLY Creamy Basil and Red Pepper Pasta

This was very good. I added 4 garlic cloves in the blender with the peppers. Used 2% milk instead of skim and regular parmesan instead of light. Also added freshly cracked pepper.

Smoky Southwest Chicken and Wild Rice Soup

This soup was very flavorful. Mine was kind of thick so I needed to add extra chicken broth. Also used fresh carrots instead of canned which I sauteed along with the onions and celery -- plus I added fresh garlic at this step. My only problem with the recipe is that it only yielded about 2-3 main dish servings, not the 6 as stated. I wish I had at least tripled it. Will also switch to regular chicken breasts instead of canned.

Jo's Rosemary Bread

I can't believe I haven't rated this yet since I have made it so many times. It is the most requested bread recipe by my kids... my 9 year old could smell it right when he walked in from school... he knew right away I made rosemary bread and jumped for joy! I always sub 1/2 cup of bread flour for whole wheat just to make it a tiny bit more nutritious.

Fettuccine with Sweet Pepper-Cayenne Sauce

Yummy. I only used 1/2 teaspoon cayenne and it was the perfect amount of spiciness with a little bit of kick, but not too hot. Added chicken.

Isaiah's Pretzel Fried Chicken

I would give this 5 stars for flavor, but I had some technical difficulties, so I gave it 4. I tried frying over medium heat as the recipe said, but it got really browned fast and almost burned, so I had to finish the cooking in the oven. I cut back the cayenne to a 1/2 teaspoon and it was plenty spicy.

Honey Of An Oatmeal Bread

Good flavor, but for some reason it baked too long which made it almost burn to the pan, so I couldn't really get it out of the bread machine. I never have had that problem before. Next time I will end the process a little early. I also want to try making into rolls as another reviewer commented.

Very good recipe. I used all chicken broth instead of using half water, frozen green beans instead of canned, added a can of Italian diced tomatoes, used a whole can of beans instead of just a cup. Also, three zucchinis seemed like way too much, so I cut back to two. Thought it could use a little more macaroni. Also seasoned with garlic powder, salt, pepper, and about a teaspoon of paprika. Chopped the spinach up small to look like basil to fool the kids.

Clubhouse Chicken

Not bad, but needed a lot of extra seasonings to make it not bland... even with the extras, it still only gets 4 stars. I browned the chicken first, removed, and then added back in once the veggies started to get a little tender. At the end I seasoned with salt, cracked pepper, a couple dashes of cayenne, garlic powder, and tossed in a little shredded parmesan.
