Grilled Honey-Lemon Chicken

Very tasty. Super simple. I even used reconstituted lemon juice I had in a bottle in my frig to save from having to go to the store.

White Bean Tabbouleh

My family loves this. It tastes so fresh and good. I had to sub cilantro for the parsley which was excellent, which I cut in about half as the cilantro flavor is stronger than parsley.

Chicken and Dumplings III

Great. Added some peas, a pinch of cayenne and black pepper, plus a shake of italian seasoning. Oh, and a pat of butter and about a tablespoon of cream cheese to make the broth more creamy and rich. This is comfort food at its finest!

Chicken Taco Casserole

This was good, but I totally winged. Halved the recipe and still had more than I needed. Instead of the tomatoes with green chilis, I used a 16 ounce jar of salsa. And instead of tortilla chips, I used fritos since that was all I had. Instead of black beans, I used kidney beans since I was also out of that. Served over rice with the green onions and tomatoes (mine was kind of saucy from using so much salsa for only 2 cups of chicken). Oh, I also sprinkled in some ground chipotle chile pepper.

Curry Kabobs

This was so delicious. I only did the chicken portion and marinaded according to the recipe, excluding the ginger since I didn't have any. I cooked it on the George Foreman since is winter and freezing outside.

Pork and Green Chile Casserole

Good everyday dinner. I only used one can of chillies and then sprinkled in some cayenne and used pepper jack cheese on top. I also dumped about a half a cup of frozen corn right from the frozen bag. I took the advice of another reviewer and used an oven safe pot to save washing an extra dish. Next time I think I will just skip the oven and have the cheese melt right on the stove top.

The lemon pepper was so gross!! Not sure if mine was bad or what, but we all cringed. I will make again WITHOUT Lemon Pepper! Maybe I'll drizzle actual lemon juice and cracked pepper.

Chicken Pasta Salad II

This was great. I added some red pepper flakes and a sprinkle of cumin since my son is a huge fan. I subbed chopped cucumber for the green pepper which was wonderful, and also used green onion instead of regular. I also added broccoli. The kids raved and raved about how cold noodles are so yummy.

Wine and Rosemary Couscous

This was good, not amazing, but good everyday easy side dish. I didn't have crushed rosemary and didn't bother to crush what I had. I wish I did because each rosemary leaf was a little too intense.
