Pork and Green Chile Casserole

Good everyday dinner. I only used one can of chillies and then sprinkled in some cayenne and used pepper jack cheese on top. I also dumped about a half a cup of frozen corn right from the frozen bag. I took the advice of another reviewer and used an oven safe pot to save washing an extra dish. Next time I think I will just skip the oven and have the cheese melt right on the stove top.

Easy Honey Mustard Mozzarella Chicken

The lemon pepper was so gross!! Not sure if mine was bad or what, but we all cringed. I will make again WITHOUT Lemon Pepper! Maybe I'll drizzle actual lemon juice and cracked pepper.

Chicken Pasta Salad II

This was great. I added some red pepper flakes and a sprinkle of cumin since my son is a huge fan. I subbed chopped cucumber for the green pepper which was wonderful, and also used green onion instead of regular. I also added broccoli. The kids raved and raved about how cold noodles are so yummy.

Wine and Rosemary Couscous

This was good, not amazing, but good everyday easy side dish. I didn't have crushed rosemary and didn't bother to crush what I had. I wish I did because each rosemary leaf was a little too intense.

Mexican Chicken Soup

Yummy. I added a can of black beans and some rice to make it more substantial for the kiddos. I had an OOPS MOMENT where I used cinnamon instead of cumin. Ack! Got both teaspoons in before I realized something was up. I scraped some out and still went ahead with the cumin, and you know what?… it was actually good. Discovered a new flavor combination - tasted Caribbean or something. Maybe I'll add a teaspoon of Cinnamon on purpose next time.

Green Bean Fries

Loved thees! I added a little salt and a pinch of cayenne to the seasonings. Per the tip of another reviewer I made a cucumber wasabi horseradish dipping sauce to go with. I found one on this site as part of the recipe "Crispy Green Beans with Horseradish-Wasabi Sauce" in which I doubled up the cucumbers, so the sauce recipe I made was 1/2 c ranch dressing, almost a 1/2 c finely chopped, peeled and seeded cucumber, 1 T milk, 1 t wasabi powder, 1 1/2 t prepared horseradish, pinch cayenne, 1/8 t salt, a pinch of pepper (my addition). Blend in blender. Thickens a little in refrigerator.

Crispy Green Beans with Horseradish-Wasabi Dip

Used this sauce with the recipe of Green Bean Fries also on this site. It is a similar way to prepare the green beans without having to use up 4 cups of chicken broth. In the sauce I almost doubled the amount of cucumber and added a pinch of black pepper.

Cajun Chicken Pasta

This was very tasty. I used a pound of pasta and 4 large chicken breasts. I tripled all of the seasonings, but found that I didn't need near the amount of cream (I used half and half) as would be needed for 4x the pasta. For my one pound of pasta and triple seasonings, I found 2 cups of half and half to be perfect, though I accidentally seasoned the vegetables and chicken before adding the cream instead of after.

Mustard Greens 'n Beans

This is pretty good. I have never eaten mustard greens until this recipe, and they stuck me as a little odd tasting, but the flavors of the seasonings were very good which saved the dish, in my opinion. I added pork sausage to make it more hearty, which I sauteed with the onions, drained the grease, then added the garlic, and after a minute or two proceeded with the rest of the recipe.
