Apple Crumb Pie

I made this exactly as written with Granny Smith apples. It was great but next time I think I'll try adding some oatmeal to the crumb topping for more crunch and perhaps toss in some pineapple or rhubarb to jazz it up a little.

Chiles Rellenos Pie

I would definitely make this again. It was a great success when I had a Cinco de Mayo brunch at home with friends. The peppers took awhile to roast and peel but I put the peppers in a ziploc bag for a while after roasting so the skin came off easily. I made it all the day before and just put it in the oven in the morning.

Peruvian Lomo Saltado

I made this for the International Festival for my daughter's middle school. The kids ate up a recipe that was five times the size of the posted recipe in minutes. They loved it. I thought it tasted OK, but it looked like someone threw up their Burger King. In defense of the recipe, my twenty year old daughter just finished a semester of college in Cusco, Peru and she said the recipe was very authentic.

Chicken And Artichoke Penne With A White Sauce

I made this today; it was good. I may have used more chicken than the recipe called for since I used the whole package; we like meat in our family. I used whole wheat penne to counteract all the extra meat. Next time I will add bacon to this for more flavor. This is a great one pot dinner for a crowd.

Baked Pork Chops I

It's easy, fast and the pork chops are moist. My kids (5,12,16 and 18) all liked it a lot and best of all my 5 year old didn't cry because I cooked dinner! It was a nice accompaniment to Scooby Doo mac and cheese and apple sauce. Winning at dinner is always good.
