Fabulous Beef Tenderloin

I made this for Christmas Eve dinner and everyone RAVED! I selected an organic beef tenderloin (our splurge for the season!) and cooked it to 140 degrees. Served with a wonderful herbed homemade linguine and salad of pear, walnut and blue cheese. Wonderful, simple meal!

Hamburgers and Ketchup Gravy

Definitely will make and serve again. Served it with rice (that I cooked with beef broth instead of water), green beans, tossed salad and biscuits. The men in the household went back for seconds...always a good sign.

Awesome Slow Cooker Pot Roast

Tomato-Curry Lentil Stew

A very healthful dish that's so quick, easy and delicious. Definitely going to become part of my regular menu rotation. I prepared it in my pressure cooker (15 minutes at pressure followed by quick release). I also took the advice of previous posters and used chicken broth. The diced sweet potato is a splendid touch! And I'm using (for a 4 serving batch) 3/4 tsp. curry powder and 1/2 tsp. salt. Delicioso!
