Lime Fish Tacos

Easy recipe but I felt it lacked flavor. I need something more but not sure what it is. I added the hot sauce separately as I knew the kids wouldn't go for it. Didn't have any white pepper either but wouldn't have put it in again because of the kids. My husband liked it well enough but even better after adding some salt, black pepper & shredded cheddar. I need more though...like lime or spices or something. Not sure. I did add avocado and would recommend that. I will try this recipe again & will do some experimenting. It's definitely a good base recipe.

Couscous and Cucumber Salad

Awesome! Never made couscous salad before and it was so yummy! I did use less lemon juice as suggested and not a lot of pepper so the kids will be more willing to eat it. Thanks for the great recipe!

Gourmet Sweet Potato Classic

I give it 5 stars like everybody else! I used 5 fairly large yams. After mashing them up it came to about 10 cups. I was afraid the egg mixture wouldn't be enough but it turned out just fine. Wasn't too dry or mushy. Like others said, I ended up baking my yams for an hour. 30 min. wasn't enough. I didn't have heavy cream but read the reviews of others using milk so I used whole milk instead, and it turned out great. I did have to double the crumb topping though as it wasn't enough. I made a batch w/o the pecans for those w/allergies, and it was still just as tasty. May leave out the pecans next time so I don't have to make 2 batches. This recipe is a keeper. Reminds me of the sweet potatoes that Boston Market serves.

Banana Crumb Muffins

I didn't have much time to whip something up with my over ripe bananas and didn't feel like the usual banana bread. Stumbled upon this recipe. I had to make it in a hurry and mind you I'm not like the most expert baker. Turned out super yummy. My picky eater 4 year old gobbled one up and my 17 month old (also not a big eater) ate 1/2 of one. I especially loved the topping. No wonder over 5000+ rated it 5 stars. It's a definite keeper!

Grilled Salmon I

Easy & excellent! My 4 yr. old loves it too. I tend to like sauce so I take make the marinade enough for 6 servings (instead of 4) if I have a pound of salmon. After I put the salmon in the oven, I take the leftover marinade and put it into a frying pan and let it simmer for the length of time the salmon is in the oven. It slowly thickens & makes a super yummy sauce to top on the fish.

Guacamole

My 1st time making guacamole & it was great! Easy & tasty. Of course, you can always adjust the amount of ingredients to suit your taste (i.e., less onion, more cayenne, etc.). Definitely a keeper!

Marinated Baked Pork Chops

Fluffy French Toast

I'm a novice cook and I made this before and it was only ok. It was a bit on the soggy side. But, I tried it again and this time it was awesome. The key for me was that I needed to make sure the bread was crispy before removing it from the pan. It would look golden brown as the recipe states, but it would be too soggy for me. Once I left it on the pan longer and tested the crispiness by touching it with a spatula, it was perfect! Perhaps that's what most people already do, but again, being a novice cook, I had to learn through trial and error.

Creamy Au Gratin Potatoes
