About this Cook
I retired in 2002 and moved (this past January) from New Jersey to Florida during the winter and Maine during the summer. I have a wonderful wife who loves me and my cooking and two adult children who we spend time with in NJ while passing through.
My favorite things to cook
I have been cooking for 20 years or so, but realized I only had about 15 different meals in my cooking arsenal. I wandered into AR and now I try to make new entree at least 5 times a week. I also like to bake bread, and have not bought store bread in over two years. I often buy a bunch of bananas and find a new way to use them when they ripen. People are always showing up here on "banana day".
My favorite family cooking traditions
Inviting friends to dinner where everything is home made, from the soup and croutons to dessert. I like to cook and socialize at the same time, so we often entertain in the kitchen.
My cooking triumphs
I have had many successes cooking. I have become very successful at preparing for dinners so that everything is ready at the same time.
My cooking tragedies
I was cooking a bundt cake on the top shelf of the electric oven. The cake rose during baking into the upper heating element of the oven. I smelled it, and in an effort to save the cake, I tried to pull the shelf out of the oven while holding the bundt pan and you can probably guess what happened. I got a nice burn on my forearm and it took hours to clean the mess.

Easy Baked Chicken Wings
The taste was OK, but when the baking time was up, my wings were actually floating in the sauce. I removed them from the sauce and placed them on a baking sheet and continued to bake them at a low temperature (275) for over an hour until they dried out a bit. Perhaps 1 cup of vinegar, and 3/4 cup of water and soy sauce is too much liquid? If I make these again, and that is not likely, I would brush the sauce onto the wings, repeating several times as they were baking.

Chef John's Caramel Chicken
Loved it! Used sweet peppers instead of jalapenos, hot peppers are not allowed here. I did have more liquid than I thought I would, as the juices from the chicken were more than the 1/3 cup of brown sugar mixture that I added, but I just cooked it longer until it finally got down to syrup consistency. That added a good 25 minutes to the cooking time. It was a little too salty, next time I'll use unsalted peanuts.

Vodka Rigatoni
I have made this recipe, exactly as directed, on many occasions often when we have dinner guests. I serve it with home made baguettes followed by a light dessert. A simple meal which everyone loves, and most have second and even third helpings.
