Red, White and Blue Ambrosia

This was heavenly! Made it exactly as shared. Typically, I change up recipes a little because either I don't have specific ingredients or don't care for some. For this one, I bought the named ingredients so there was no excuse. Dee-lish! Made it for a 4th of July party and it went over well. I'd like to try it a tad sweeter, so next time will leave out some of the sour cream and add more powdered sugar. I will also taste some of my blueberries before piling them in -- some of mine were a little tart.

Green Salad with Dried Mint

This was simply delicious. I usually change something in the recipes I try, either because I don't have or don't care for an ingredient. For this one, I followed exactly (except I used fresh mint from my yard). Then I forgot to add the hearts of palm I had just bought for it!! ARGH! But it was still delicious -- made it for girls' dinner and there was none left! Thanks!

Exotic Mushroom and Walnut Pate

crazy good! and someday i want to make it exactly as written. however ... i had some shrooms in the fridge that i needed to use up and this recipe caught my eye -- must have been the word "exotic." mine were not, but thought i could sub anyway. oh, wait. walnuts? didn't have any of those either. no shallots. i used regular onions, white and baby bella mushrooms, elephant garlic, all the fresh herbs listed plus sage. for the walnuts -- and this is REALLY nuts! -- i used old-fashioned peanut butter! i made just a little in case it was inedible, but here i sit with my "woven wheat crackers" (didn't have french bread!) chowing down like crazy! thanks for the "exotic" inspiration!!

Sweet Pea Mockamole

Whodda thunk?! Peas in guacamole? I was hesitant but game. Now, I've made it dozens of times and it just gets better. Anytime I have forgotten I'm supposed to take a dish somewhere, I whip this up. Buy a bag of chips on the way to the party and presto! It's quick, easy, uses ingredients that I always have on hand, and everybody loves it -- even those who can't imagine nor believe they are eating guac with no avocado!

Fabulous Roasted Cauliflower Soup

Great recipe! As usual, I had to change it up a little to make it my own. Using a previous suggestion, I added about 2 cups of (leftover) baked potatoes to the pot for flavor and thickening, then used just one cup of half and half for more richness. Instead of chicken stock, I used my own veggie stock to make it a vegetarian soup. I skipped the bay leaf and used about 1 tsp of marjoram, which worked nicely with the thyme. For a little punch, I tossed in a dash of cayenne pepper! Blending it all in the pot with the immersion blender (I call it "the bopper") saved time and the washing of more bowls and appliances!

Sweet Potato Potato Salad

I was skeptical at first, but decided to go for it and take this to a 4th of July party. It was a hit. I was glad I had doubled the recipe. My only changes (after doubling) were that I used 4 sweet potatoes and 4 white potatoes, making it half and half. I didn't have any eggs on hand (and was not about to go to the grocery store on the eve of a holiday!) so I had to leave those out. Next time, I'll be sure to add them. I also used leeks and chives from the garden for a milder onion flavor. Luscious and colorful! Thanks for the recipe!

Mock Tuna Salad

Amazing! It DOES taste much like the tuna salad I remember Mom making, but I've also been a vegetarian for 20 years, so perhaps taste memory has faded. However, the texture is definitely like tuna salad (I did mash the garbanzos with a fork a bit), and the flavor of the other ingredients pushes it to the top of my "repeat" file! My only addition to the recipe was another tablespoon of mayo and relish, for added smoothness and a little more crunch. Serve with Ritz crackers as a snack!

Hasselback Potatoes

Yummy! I've made these a few times now and learned something new each time. I wanted to use the tip about cutting with wooden spoons underneath, but didn't have any, so I used chopsticks! I found the potatoes spread out better during the first baking session when I left the skins on, allowing more goodies to get between the slices. I used EVOO, romano, panko, and some fresh chives once and rosemary once, both from my garden. Used exact baking times for large baking potatoes and they were perfect! This is a new regular in our meals!

Very Veggie Lasagna

Excellent recipe and not too time-consuming. I didn't change much -- added fresh diced tomatoes to the jar of sauce and added Italian seasoning mix. My only concern was that all those veggies almost didn't fit into the pan! Deelish!

Italian Style Brunch Cakes

Fabulous! A great alternative to regular old weekend breakfast or brunch. I was concerned that this would make too much, but it almost wasn't enough! The only change was that I left out pizza sauce because I didn't have any. It was still excellent. Will make again.

Buzzsaw's BBQ Sauce

Wowser, Buzzsaw, this is fab-you-lous!!! I added a little brown sugar, used half the ketchup and twice the mustard, and let it simmer until the coals were ready. This was thick, sweet, delish! I'll be using this again! Thanks.

Bacon and Tomato Cups

We love this one! Quick, easy, and uses readily available ingredients. I've made it twice now and made some adjustments. 1. We're vegetarian, so I eliminated the bacon (our fake bacon just didn't work). 2. Cut the mayo by half. 3. I used more basil, since we grow our own and have a lot! 4. Used more tomatoes to go with the extra basil. 5. Added chopped fresh mushrooms. 6. Used goat cheese! YUMMM! Parmesan works too. Like a previous reviewer, I can foresee making these cute little cups with all sorts of tasty fillings -- just think of all the foods you might eat with biscuits! Also, for the picky eater in our house, I made a couple of cups with just cheese. This is going to the next office potluck!
