Southwestern Chicken Lasagna

The corn tortilla's turned to mush. The flavor was good - just like enchilladas, but I won't make this again. Next time, we'll just go with plain ole chicken enchilladas.

Chicken Cordon Bleu Bites

This is a pretty good recipe, but as other reviewers have said it definitely needs spices in the chicken mixture! I chopped 1 chicken breast and two slices of ham in the food processor, added garlic powder, salt and pepper. But will add more spices (maybe some cajun or chili powder) next time. Also I think the swiss cheese and the deep-pan frying makes it too greasy, so I'll fry it in a little butter/use the oven method and use some other cheese next time. Loved the idea though,great base!

Absolutely fantastic! Finger-licking, no-leftover, scent-the-house fabulous! Follow the recipe exactly, except I generally have too much icing. Thank you ANDYTAMI for posting a review with instructions for the no-bread-machine version! Works like a charm!

Amazing Ribs

Absolutely fantastic! My husband could no longer talk, but only made "mmmm" noises the entire dinner! I used Grolsch Kanon for the beer (we're in Holland) and it's 11% alcohol and gave a great deep beer flavor to the ribs. I didn't have the bbq set up (wintertime) so I put them under the boiler in the oven for the exact times stated for the bbq and they browned very nicely. Keep an eye on them under the broiler though, yours may be hotter/cooler/closer/etc. Other than substituting the broiler for the bbq, I followed the recipe exactly and this will be our ribs recipe from now on!!

Big Al's K.C. Bar-B-Q Sauce

Fantastic! I'll back off the red wine vinegar a little next time. Because I can't readily buy liquid smoke here (I'm in Europe) I think the vinegar was a bit overwhelming. So I'll add half next time and go up from there. But absolutely the best and tastiest sauce even without liquid smoke! I used it with shredded left over pot roast (chuck roast), added some fried onions and fried bell peppers, mixed it all up and served it with some cheese on a nice hoagie roll. Excellent sauce!

Zucchini Bread IV

Very very good! I used the nuts and brown sugar topping as other reviewers suggested. Also, I used half applesauce and half oil instead of all oil. This made me cut back on the sugar too (applesauce adds sweetness) to 1 cup and with the sugar topping it turned out fantastic!

Balsamic Vinegar Potato Salad

I liked it pretty well, though it was a strong flavor. I added a little brown sugar to the dressing to tone down the vinegar a tad. The vinegar has quite a bite, a little too strong for my taste. Definitely different than regular potato salads, so keep that in mind!

Coconut-Cornflake Cookies

Excellent cookie! Even the people who don't have a sweet tooth or aren't big cookie eaters absolutely loved it!! We did use less sugar (little less than a cup) and it turned out a little on the sweet side. Will use 3/4 cup next time and we'll experiment with chocolate (drizzle/sprinkle) next time too. But even without, they were delicious and easy!! Perfect to make with kids: this time the batch was made by my 12-yr-old sister!
