Millie Pasquinelli's Fried Chicken

Loved this recipe! Everyone I've made it for always raves about it and constantly asking me to make more! I added some paprika to my mix and used sea salt and cracked pepper or a pepper medley. on occasion I have also let the chicken bath in either buttermilk or broth beforehand. You really do not need to boil the chicken prior to frying... I've made this many times and the chicken has always been cooked thoroughly with no alterations to the directions, that has been my experience at least. This recipe is a definite keeper!

Chicken Enchiladas I

absolutely delicious. came out perfect. i made it for my brother and boyfriend, they couldn't stop talking about it all week. next time i'm going to use less water and less sour cream, and add corn to the mix. i'd use a whole bell pepper...1/3 cup just isn't enough in the ratio. overall, i'm adding this one to my personal collection.

Spinach and Potato Frittata

i read the reviews (as i always do, for an inspired changes) and they are dead on. definitely season the potatoes in a bowl before adding to the pan. i opted for garlic powder, sea salt and a peppercorn medley. i didn't use nearly as many potatoes, you honestly don't need too. i used more green onions and spinach. i added garlic salt to the vegetable mix while cooking. i made it for easter brunch and my family raved all day about it. will most assuredly make again... with my tweaks of course.

Crispy Cucumbers and Tomatoes in Dill Dressing

this recipe needs to be altered to read, chill overnight. i tried it after 2-3 hours, still bitter. yet, the next day delish... and still delish the day after. i primarily make this for myself to snack on, or be a small lunch. with a one and a half year old to run around after, it's tasty and fast.

Best Spanish Rice

be sure the brown the rice completely. otherwise, i wasn't impressed overall. despite the seasoning it was almost bland... i wouldn't make this specific recipe again.
