Baked Potato Soup I
Delicious soup and super easy! Only used 1/3 of the butter that the recipe called for and used skim milk. I also used pre-cooked turkey bacon. I used pre-chopped chives (found in the seasoning aisle), and added a bit of extra salt and pepper to increase the flavor. Everyone who had some loved it! Perfect for a cold fall/winter day!

Artichoke and Sun-Dried Tomato Chicken
Very good dish! I made a few changes to the original recipe, according to the items that I had in the pantry. I coated the chicken breasts in italian breadcrumbs which gave them a nice flavor and texture. I only had plain diced tomatoes, so I sauteed some garlic and onion before adding the tomatoes to the pan. I mixed some Knorr pesto mix with some sun-dried tomatoes in oil to make the tomato pesto. Next time, I will focus more on creating a true tomato pesto, as there was not enough of that flavor in the dish, in my opinion (I love pesto!). I only used about half the amount of artichokes called for in the recipe, and it was more than enough. Will definitely be making this recipe again!

Southwestern Egg Rolls
Wow! I cannot believe how much I enjoyed this recipe. I originally decided to make this recipe because my husband is a huge fan of the Southwestern Egg Rolls at one of our favorite restaurants, and I was never really a fan. However, once I tried them, I loved them!! I made a few adjustments in accordance with the ingredients that I had in the house. I used a frozen combination of red and green bell peppers and white onions in place of the red bell peppers and green onions, as that is what I had on hand. I also used a cherry pepper from the garden in place of the jalapeno pepper as I did not have any. I also did not have any cayenne pepper, so I skipped it. After reading previous reviews, I noticed that many people were using egg roll wrappers in place of the tortillas. Because I had both in the kitchen, I made half with egg roll wrappers and half with flour tortillas. My husband and I both agreed that the egg roll wrappers were the best. Next time I might try baking some of them, as others have suggested. I cannot wait to make this as an appetizer for an upcoming party. I know that it will be a hit!
