French Crepes

My weekend go to breakfast these days. I like top it with lemon juice and powdered sugar. This is a nice recipe because if you are starting out and new to crepe making you can just change the servings to 4 that way you only use one egg. I say this because when I made my first batch the crepes sorta resembled jelly fish. Instead of nice and round they were sea creature shaped. And depending on what size pan you use it may take more than 2 tbsp of batter. Too little batter and you won't get it all the way around the pan. Not that it matters, they taste awesome no matter what shape. *A few times I used substitutions for the milk and sugar and they were just as yummy.

Perfect Coconut Macaroons

Excellent recipe! My first time making coconut macaroons and these came out great. The few recipes I looked at before this one called for condensed milk or unbeaten egg whites which sounded unusual. So I tried my hand at this recipe. It was pretty simple to whip together, easier than making chocolate chip cookies (and healthier). I don't think I'll ever need to resort to using condensed milk, this IS the perfect coconut macaroon recipe.

Buttercream Icing

Easy recipe, delicious results. ...well i used margerine since i didn't have shortening; just make sure neither of them are too soft that they melted a tiny bit. i thought it wouldn't make a difference , but it did. No problem, just tasted a little too buttery, my fault though. 4 *'s

Bodacious Brownies

YUM!! A perfect mix between fudgy and cake like in texture. Simple to make for my first time making brownies from scratch. I had to make some alterations because i was really low on cocoa powder, so I only used 1/3 cup of butter (or 2/3 of the stick of butter) and melted semi-sweet chocolate chips with the butter. I guess because of this it was nice and moist, but I'd recommend using dark chocolate or using less sugar because it came out a bit more sweet than i like my brownies to be. I added pecans and and a dollop of mocha frosting. Mmm. Thanks for sharing this recipe. My family enjoyed these brownies ^-^.

Banana Muffins II

Perfect banana muffins!! I followed the recipe exactly as is and they came out perfect. The second time (making them) I added chopped pecans and chocolate chips for my parents, yum. Thanks for this recipe!

Creamy Rice Pudding

Mmmm! so good. For some reason I didn't like rice pudding as a kid, but now i do. This recipe is great and easy to make. I used jasmine rice and 2% milk. I did use a sugar substitute (5 packets of splenda did the the job). And i used smart balance spread instead of butter and a dash of cinnamon. Oh and you have to be careful with adding the egg or it will curdle. Tempering is the safest way. Forgot to add the raisins so i just shaved some chocolate over the top. Anyways, i need to go before someone else eats the rest of the rice pudding.

Honey Oatmeal Cookies

These were pretty good. Even better straight out of the oven, and as one person said "a great tea cookie". The texture is a bit like a scone, with a slight floury taste. You can definately taste the honey though. I used only 3/4 cup honey and about 4 or 5 packets of Splenda sweetener. I substituted 3/4 cup Smart Balance buttery spread for the shortening and did add about 1/3 cup more of flower. Could have used about a teaspoon of salt. I baked it at 325 F. for about 15 mins, lightly sprayed some Pam on aluminum cookie sheet and they came right off. Thanks for the recipe, i know i will make these again.

Banana Banana Bread

This was my first time making banana bread from scratch. I had made this over the holidays and it was delicious. I was actually short about 2/3 cup bananas so i added some apple sauce and vanilla yogurt. I didn't know how it would come out, but it turned out you couldn't even tell there was apples in it. Plus my dad said it was great, and requested me to make it again. I also didn't add nuts to it since i didn't have any at the time. This was surprisingly easy to make, thanks for the recipe.

Flourless Peanut Butter Cookies

Well i used this recipe using all natural chunky peanut butter and it turned out pretty flavorless. I think the only way to make this recipe is to use the standard creamy peanut butter like JIF or Reese's. It wasn't bad the way i made it, it just didn't taste very much the way a cookie should taste.
