Spanish Chicken and Rice

This was a good recipe. Fairly easy to make, nothing out of the ordinary. My little one didn't care for the pepper (I used yellow and red instead of green because that is what we had on hand.)

Nutty Apple Crisp

I merged this recipe with another apple crisp recipe, using 7 cups of apples, 1 cup oats, 1 cup flour and 1 cup brown sugar along with cinnamon, nutmeg and 1 cup nuts. It tasted fabulous and our company loved it too.

New England Clam Chowder II

I saved the crumbled bacon and added it to the soup just before serving--this recipe was wonderful. I used 3 cups of half and half and instead of canned clams, used the crab from the foil packets they sell now. This recipe was so well received, everyone went back for second helpings (and I have two finicky eaters.) Another trick I've learned with other soups is to take a bit over half of the potatoes and dry mash them and add them to the soup to help thicken it.

Peanut Butter Haystacks

Killer recipe - FANTASTIC!! I was skeptical but we loved this recipe better than the Haystacks II recipe with semi-sweet chips....love the recipe just the way it is! My stister-in-law has shared this recipe with her friends in St. Petersburg, Russia.

False Cabbage Rolls

I too modified this recipe and actually got an idea or two from another allrecipe entry "Cabbage Jambalaya." Along with the onion and meat, I added two chopped garlic cloves. I used one can of tomato soup and 1 can of tomato sauce that had the Italian spices in it. In addition, I put in about 1/2 teaspoon each of Italian seasons, basil and oregano. I also added one cup of minute rice when I added in the tomatoes. With these changes we had a most excellent meal--both my husband and daughter went back for seconds!

Chicken Casserole Del Sol

If there were a 1/2 star rating, I would have given this 4 1/2 stars. I followed the directions to the letter and we enjoyed it. The buttered corn flakes were a nice surprise! Curry is such a strong spice, but I know we'll make this one again.

White Chili I

Instead of chicken breasts, I added one package of Tyson Southwest seasoned chicken breast strips (cut up) and 1/2 lb. of hot pork sausage. I used other suggestions and added 2 cans (undrained) great white northern beans instead of the cannellini. Most excellent - just the right amount of spice!
