Whole Wheat Pancakes

I made these for my husband's birthday yesterday and they turned out great. I didn't have buttermilk so I used 1/2 vanilla yoghurt and 1/2 skim milk (healthier that way too). I added blueberries to some pancakes, chocolate chips to some and nothing to the others and they were all yummy! I was a little concerned though about the amount of butter. I think next time I'll try to cut down the butter and sub some applesauce instead. Thanks for the recipe!

Sam's Famous Carrot Cake

Tried this recipe last night for a family dinner and it went over very well. I can't stop eating the leftover, deliciously cold from the fridge. I only made slight changes - no raisins, 1/2 whole wheat flour and 1/2 white flour, slightly less sugar. I topped the cake with cream cheese frosting. This is a keeper.

Double Tomato Bruschetta

I love this recipe. The bruschetta turns out so yummy. I prefer to reduce the balsamic vinegar slightly though and sometimes I add some finely diced onion. Either way though it turns out very tasty! I will try with goat cheese maybe for fun next time.

Peanut Butter Cup Cookies

I made these for a work function and people raved about them. They are addictive. I followed someone else's suggestion and put the chocolates in the fridge first and they were easy to push into the cookies. Also, I listened to the advice around not over baking these. The cookies hardly look done but they are brown on the bottom and ready to take out after the alloted time. I will make these lots!

Curried Coconut Chicken

DH and I made this together the other night and it was delicious! We severed it over rice with asparagus on the side and it made a lovely meal. The leftovers re-heated were delicious too. We will definitely make it again. Thanks for the recipe.

Sandy's Chocolate Cake

I made this cake following the recipe exactly except for scaling it down to 9 servings and pouring it into 2 cake pans instead of 3. I found scaling it down made the perfect amount of cake. I put chocolate pudding between the layers and I used duncan hines icing b/c I was in a rush. It was very moist and tasty cake. I will definitely make it again.

Banana Sour Cream Bread

My entire family loves this recipe. I often use whole wheat flour to make it healthier and I substitute about 1/2 apple sauce or apple butter and 1/2 butter or margarine instead of all butter. I usually cut the recipe in third and make 1 loaf. My kids like it with chocolate chips so I add those too. I also like to do a little topping on it of brown sugar, white sugar, flour, cinnamon and butter. If I don't have enough sour cream I sub all or 1/2 for vanilla fat free yogurt. Sometimes I toss in a little bit of cloves or nutmeg for fun. Yummy and so moist.

Chocolate Chip Cookie Ice Cream Cake

My entire family enjoyed this recipe. I decided to make a few minor changes as per other suggestions. I used a brownie mix to bake brownies in the round spring form pan. I cut the brownie circle in half leaving half for the base of the cake and then used the other circle as a middle layer in the cake. I layered brownie, Hershey's chocolate fudge topping, chocolate ripple ice cream, brownie, fuge topping, skor bits, ice cream, then I iced the top of the cake with cool whip. I decoated the cake with a bit of Hershey fudge topping and 2 broken up skor chocolate bars. It was yummy and very pretty.

Mulligatawny Soup I

This soup is absolutely delicious! My husband raved about it and he sort of likes everything but rarely loves anything and this one did it! Based on other reviews I did increase the amount of curry and tossed in a little bit of cayenne. I had to increase the broth towards the end b/c it had boiled away a fair bit and was a little thicker than we like. I omitted the cream b/c it was great w/o it and I wanted to reduce fat. I also used half butter and half olive oil. I added the raw chicken right after the celery and carrots to cook it slightly before adding the broth. This gave the chicken a nice flavour. I also grated the apple and used almost a whole one (granny smith) rather than putting in chunks on advice of another reviewer. Thanks for a great recipe. We'll make this over and over again.

Banana Cake VI

This cake turns out moist and so delicious. Everyone I served it to raved about it. It was awesome the day it was made and 2 days later was still great and moist. I didn't have time to do the freezer trick as I wanted to get to bed so I baked it at 300degrees for just over an hour, then inverted it and let it cool overnight on the counter. It was still perfect. I followed the recipe pretty closely except had to use lemon juice in skim milk b/c I didn't have buttermilk, and I used whole wheat flour b/c that's all I had. Try it, you won't be disappointed.

Fall Off The Bone BBQ Back Ribs

These are the best ribs I've ever made. They literally fall off the bone and are very tasty. The acid in the lemon helps tenderize the meat and gives it an amazing flavor. This is the only way we do ribs now.

Spicy Rice Pilaf

I love love love this rice, so does my husband. I did however make a couple of minor adjustments to meet our preferences - I used brown rice to make it healthier but then had to add a bit of water and cook for longer to accomodate the brown rice, I cut down the corn and I didn't use any pimentos. This rice has a nice flavor and goes well with most meats. It's also full of fiber and protein with not a lot of fat. You can make it more or less spicy depending on what type of salsa you use. I like to use medium salsa. Leftover rice reheats really well and tastes great!

Award Winning Soft Chocolate Chip Cookies

I love these cookies!!!!!!!!!!! They turn out very soft and chewy. They taste wonderful. At Christmas I use half choc. chips and 1/2 green and red m&m's and they're tasty and festive looking. I also love these with chocolate pudding and peanut m&m's. They are also yummy with skor bits or butterscotch chips along with chocolate chips, or half chocolate chips, half mint chips. The recipe makes alot so I either cut it in half or freeze them as they freeze/thaw well. Thanks for the recipe.

D's Famous Salsa

My husband made this salsa for a BBQ we hosted recently and it was delicious. The only change he made was the addition of a jalapeno pepper and he used fresh tomatoes rather than canned. Yummy!

Pumpkin Pie Bread

My rating is based on a few changes I made, but I'm sure the original recipe is wonderful too! I use whole wheat flour to make it healthier and half applesauce/half oil. I also like to cut down on the sugar, but use orange juice instead of the water. As suggested by other reviewers I also increase the spices slightly. The bread turns out moist and very flavorful! My whole family loves it, kids included.

Favorite Strawberry Rhubarb Pie

I tried this recipe exactly as stated and I found it to be too runny and there was too much of a jelly texture to it. After my ingredients sat for 15 minutes as directed, there was a lot of liquid in the bottom of my bowl. The juices ran all over the baking sheet even though I left a bunch of liquid in the bowl after scooping out the pie filling. I used 3T of lemonjuice since I didn't have a fresh lemon and I'm not sure if this contributed to the runny problem. The tapioca gave it a very jelly like texture which I didn't really like very much. I don't think I'll try this recipe again.

Thai Peanut Chicken

I made this recipe following the suggestion offered by many to double the sauce. I found this to be too strong of a flavor and too goopy. Perhaps I should've followed the original recipe as it was. I don't think I'll try this one again as my husband and children didn't like it either. Even with less sauce I didn't find the flavor that appealing.

Pie Crust IV

I tried this recipe yesterday for a pumpkin pie. I followed the directions exactly and even some of the common suggestions in the reviews and it turned out dense and chewy, definitely not light and flaky. It was edible but not enjoyable. Most of us just ate the pie filling out of the shell and left the crust - hey it saved me from consuming several calories and fat grams! I will try one of the other recipes listed instead next time.
