Grandma's Gingerbread Pancakes

I did this the lazy way by using a cup and a half of pancake mix and then adding the recommended amount of spices, molasses and vanilla then just adding water until it reached my preferred consistency. Delicious! If you have pancake mix save yourself the trouble of mixing the dry ingredients and just use that instead. Doing it this way will also fix the problems that some reviewers were having with the pancakes not being fluffy or thick enough... If it's too thin just add a little more pancake mix - too thick? Add a little more water. Enjoy!

Pumpkin Pie Squares

Super delicious! I did have to do some modifications though, which are as follows: I used pumpkin pie spice, cinnamon, nutmeg and allspice to taste because I didn't have all of the spices listed. I also added vanilla to the crust and filling mixtures and used 2 whole eggs instead of just the whites, and a whole 15 oz. can of pumpkin. I baked it in an 8x8 pan and followed the crust recipe exactly (except for melting the butter and turning the oats into oat flour) but doubled the crumb topping. For the topping I used margarine vs butter and pecans vs walnuts and also added at least 1/2 cup of flour to ensure that the topping would have a crunchy texture. The end result is amazing and my husband and sons LOVE IT!! We ate it fresh out of the oven with vanilla ice cream but I am looking forward to enjoying them chilled tomorrow. Yum!

Oven Fried Chicken II

This was delicious! I added creole seasoning to the flour and Mrs. Dash and salt to the egg, I also didn't measure the oil, instead I just coated the bottom of each pan... If I had to guess I'd say I used closer to 1/3 cup of oil. Family loved it and I loved the ease of it. This recipe was definitely an instant hit! Thanks!

Asian Glazed Chicken Thighs

I made this chicken exactly as instructed but didn't really care for the sauce. The vinegar flavor was too prominent for me and overall the flavor just wasn't that great. My kids, however, loved the chicken and inhaled it so fast my husband didn't even get a chance to try it. That being said I think it's a hit as a marinade but IMO the sauce needs tweeking.

Turkey Joes

These were really good! I used spicy brown mustard instead of Dijon because that's all I had. I didn't measure exactly, just kind of tasted my way through guesstimating the amounts of the ingredients listed. My family loved them and my son asked me to to take a sandwich for lunch tomorrow. Thumbs up!!

To Die For Blueberry Muffins

These are THE BEST muffins I have ever made and up there with the best I've had! They're delicious and so easy I can't even believe it. I used the recipes as written except I added vanilla and about 1/4 tsp lemon extract and omitted the crumb topping when making blueberry muffins, instead I just sprinkled a little sugar on top prior to baking. I also used this recipe to make a cinnamon crumb muffin and again used the recipe as written except I added vanilla and 1tsp of cinnamon to the batter and added about an extra 1/4 cup of flour to the crumb mixture so it would be crisp. There was enough crumb mixture to put some in the middle of each muffin and some on top. Perfect! Thanks!! **TIP** Toss the flour around (kind of sifting it in the bag) with the measuring cup before measuring and leveling it out. This allows you to incorporate air into the flour. If you skip this step and use a packed cup of flour your muffins will be much more dense because you'll essentially have added more flour.

Brown Sugar Brownies

I followed the recipe almost exactly, I doubled the vanilla, added about 1/4 tsp of almond extract and left out the walnuts and they came out moist, chewy and delicious! I baked for about 20 mins and they were perfect! Thanks!

Funnel Cakes I

These were delicious and perfect for my son's carnival themed birthday party! I added vanilla and had to tweak the flour to milk ratio a bit to get the perfect consistency because it was too thin at first and the batter kept scattering throughout the oil. But once I got it right they came out absolutely amazing and were a big hit! Also, I think it helps to let the batter sit for a while before frying.

Excellent, easy coleslaw recipe.This was my first time making coleslaw - I needed some for pulled pork sandwiches. The only thing I added was garlic powder and it came out perfectly. YUM!

Italian Sausage Soup

This recipe is definitely worth all of the 5 star reviews... It's Delicious! I followed the basic recipe but made some exceptions. I left out the zucchini (don't care for it) and added chopped onions and chick peas. I also added garlic powder, onion powder, pepper and worcestershire sauce to taste and a little bit of whole grain rotini to make it more hearty. Everyone raved! This will definitely be a staple in my home from now on. P.S. I've already shared this recipe with my mom and she will soon be making it as well. I have no doubts that she will love it. Thanks!

Kickin' Collard Greens

Kickin' is right! These greens are great! I've made them twice in two weeks and my family loves them. For anyone that is nervous about making greens this recipe is for you, it's definitely very easy and VERY tasty! I follow the recipe to a tee except for the spices. I add seasoned salt instead of regular salt, cajun seasoning instead of red pepper flakes and I also added a little sugar to offset the natural bitterness of the collards. I buy the already washed and cut greens from the grocery store to eliminate some of the work, but they come in 2 pound bags so if you're going to go this route you'll have to double the recipe. TRY THIS RECIPE, YOU WON"T BE DISAPPOINTED!

Mini Cheesecakes III

These are soooo unbelievably good and so simple to make! I've made them twice in two days! I did make some very slight adjustments... I left out the lemon zest and added a little extra vanilla to balance out the lemon flavor. I'm sure that these are great with the graham cracker crust but I didn't have graham crackers so after lining the muffin pans with cupcake liners I placed one ginger snap face up in each one to serve as the crust. Ginger Snaps make an amazing crust as they soften a little while baking and taste very similar to a graham cracker. Also, you save some calories since you don't have to add butter and sugar. Last tip: I baked in a water bath - not sure how these do without a water bath. Great Recipe! I will make pumpkin and chocolate variations over the holidays. Thanks!

Blueberry Sour Cream Coffee Cake

This was good, but kind of wet. I think that if I make it again I will cut down on the brown sugar. The flavor was really good and very sweet. I added extra blueberries as some of the other reviewers suggested.

Golden Yam Brownies

This recipe is very good! I added a little cinnamon and nutmeg because I love those spices with sweet potatoes. Instead of baking in a 9x13" pan I made cupcakes and instead of using the glaze I made Cream Cheese Frosting II and put that on top. YUM!

Very good! I sprinkled a little cinnamonon the top, but next time I will add it to the batter. Very light and not overly sweet. Served with ice cream. Will definitely make again! Thanks!

Cream Cheese Pound Cake III

This pound cake turned out very good! I found that the batter was very thick, so I added a little milk. I also added 1 teaspoon of baking powder and vanilla to flavor (1 teaspoon wasn't enough). I think that the baking powder made it a little less dense, but if you like a really dense cake, then skip that. Overall, though, it was really simple and tastes really good!!! Thanks!
