Best Brownies

I made these exactly as written (except I used a mini muffin pan and baked for 15 min) and I got some awesome brownies! Mine came out crunchy on the outside and slightly chewy in the middle. Topped them with a cream cheese frosting, a strawberry, and a lil blob of frosting on top to make Christmas-y Santa hats. :)

Sweet Potato Pie I

I followed the recipe exactly as written and my pie came out pretty awesome. :) A bit on the sweeter side though, I think I may take that down a bit next time.

Bumbleberry Pie I

I followed this recipe exactly as written and had no issues whatsoever. This is a VERY tart (yet delicious) pie and the sugar it calls for was the perfect balance for my black/raspberries & rhubarb. I'm not sure why the other reviewers thought differently...maybe their berries were sweeter than mine (which were sweet but more tart)?

Pie Crust II

This is a great looking and easy to make crust but the soda doesn't overpower the taste of lard, as I had hoped. Perhaps butter instead of lard would give it a better flavor? Not a bad taste and the lard flavor is so slight, that most couldn't tell.

Grandma Schell's Lacy Cookies

Of course, I loved my Grandmother's cookies... :) If you don't have Baking Powder, use 1/3 tsp Baking Soda + 2/3 tsp Cream of Tartar. You can also melt semi-sweet chocolate and drizzle it onto the cookies after they cool for that little extra something you might be craving.

Chocolate Mayo Cake

I increased the cocoa to 1 cup, like others have recommended, but 1 big difference is to NOT use water. Use milk! Naturally brings out a richer chocolate flavor. I added a little more milk to get the usual cake consistency & to offset the extra cocoa powder. Decrease the cooking time slightly as I noticed milk cooks faster. I also made my own mayonnaise using Allrecipes instructions (1 egg yolk beaten with 2 tables lemon juice and slowly whisk in 1 cup extra virgin olive oil). I don't eat soy so store bought mayo just won't do! :) Thanks for sharing the recipe!

Chicken Salad

This is really good - exactly what I was looking for. Added Fuji apples as one of the reviewers did (although I kept the grapes). I thought the Worcestershire Sauce, onions, bacon & ginger might be a lil overpowering but it was perfect~ :)~ Thank you so much for sharing this!!

Ratatouille

I cut it all up as thin as my uncoordinated hands would allow, tossed it in a huge pan that was lightly oiled, a lil salt/pepper & parsley and cooked it til it was soft (took about 35 minutes). Sprinkled a lil fresh Parmesan on top of each serving and the family loved it! :D Traditional ratatouille nicoise doesn't have Parmesan, parsley nor half the vegetables asked for but they do add to the dish quite nicely. The only thing I will change in the future is the bell pepper as its flavor is a bit too strong and takes away from the other veggies.

Irish Lamb Stew

I'm not a huge fan of red meat stews but this one is pretty decent. It hides that ever so different, musty lamb taste rather well but I felt so odd adding beef stock to this...since that makes it a beef stew in my opinion... My kids loved it but I'm sticking to the American-Irish tradition of corn beef & cabbage next year.

Caper Baked Chicken

I didn't measure anything.. just kinda threw the amounts that looked good to me and it was verrry yummy. :o) My guess is I used more butter and lemon juice than called for and merely seasoned it with A1 just to give it a lil extra kick. Came out great! The chicken was moist and the capers were perfect! Some mashed potatoes on the side and dinner was set and everyone was happy :D

Peppermint Ammonia Cookies

This tasted like shortbread with peppermint oil. Hartshorn (bakers ammonia-no it's not poisonous...was the first question my husband asked) is a bit difficult to find in Riverside, CA but I found some stuff on Amazon with crazy shipping costs. You can substitute a mixture of baking soda and baking powder instead (like 2 tablespoons baking powder and 1 tsp baking soda for this recipe - that includes the baking powder listed in the recipe). The peppermint oil was a bit too strong for me but on my second try; 2 tsp peppermint extract worked just fine.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Only thing I changed was Chicken instead of Asparagus. Not bad but everyone in my family only said 3 stars which I agreed with...next time instead of following the submitted recipe, I'll try the notes that other members posted (like using herb Boursin instead of peppercorn).

Antipasto Pasta Salad

Very tasty and my husband loved it! I excluded the bell peppers (cuz I hate 'em), used sun dried tomatoes which really gave it a nice flavor and only 1 tablespoon of the oregano (2 tablespoons just looked like too much). Found me a nice new recipe for work potlucks! Woo!
