Marinade for Steak I

I marinated 24 hours, maybe more, and we thought this was an excellent marinade. There was no need to 'doctor' the steaks on the grill.

Popovers

These are easy, fun and delicious. Mine were a little browner than preferred, but I just got a new oven and think they needed to be on a lower rack. My only complaint is a Popover complaint in that you have to eat them immediately and they take a long time to bake.

Orange Dream Punch

This is a fabulous-tasting and super easy punch that I served at my daughter's wedding and a friend's bridal shower. The regular orange sherbet is definitely better than the orange sherbet/vanilla swirl ice cream.

Citrus Turkey Brine

This was my first time to brine and I definitely will continue doing it. The only change I made was to use whole peppercorns. I used a 5 gallon bucket and a 12 lb. turkey overnight, with ice on top of turkey. I then rubbed butter under the skin, salted and peppered outside of skin and roasted in an oven bag. It was ready in 2 hours and delicious!

Baked Bar-be-Que Chicken

I liberally rubbed salt, pepper and garlic inside and outside the skin. I think this is a great technique (foil an hour, sauce, bake 30 min) for cooking bbq chicken. An hour uncovered usually leaves it dry and this was nice and moist.

Japanese Zucchini and Onions

Sugar Free Blueberry Coffee Cake

This is the best sugar free dessert I have made. I used closer to 2 cups, maybe more, of frozen blueberries, dusted in a little flour. The topping if wonderful and as the recipes says, it is best served straight from the oven.

Blueberry Dump Cake

This was fantatic hot, cold and warmed in the microwave. I used fresh blueberries that were frozen then thawed. I thinly sliced the stick of butter on top. Everyone loved it, especially with ice cream.

BBQ Pork for Sandwiches

I used pork country ribs and cooked on low 8-10 hours (in broth). Pulling and putting it in the oven to bake for 30 minutes in the bbq sauce really pulled the "crock pot" flavor out of the meat. This is super easy and a great recipe. 2nd time, I cooked on high 4 hours and proceeded as written. Again, no "crock pot" flavor!

Marinated Flank Steak

This is a fantastic marinade. I actually used flat iron steak, which I find comparable to flank. I did marinate for a day and half. No sauce was needed. It was delicious.

Warm Italiano Spread

Very, very good. We used a little more pesto and baked it in the oven. The only drawback is once the pesto on top is eaten, you are left with a good bit of cream cheese. I think I will slice it, then top it so it goes down into the block.

Roasted New Red Potatoes

Grilled Lemon Herb Pork Chops

I used one pork tenderloin (one, not a package of two) and kept it whole. It marinated for 1.5 days and was fantastic. It was such a wonderful change from typical pork tenderloin recipes. I served it with roasted quartered, baby red potatoes that I roasted along with the pork. Truly delicious.
